Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I like to eat them with fruit – typically apples… Or make them into nut butters of course – nut butter fingers! 😉

    I love making candied pecans and putting them in a salad with fresh bacon bits, onion, sliced pears, and homemade dijon dressing. Yum!

    I think my favourite way to eat nuts is by the (small) handful! I like the flavour to just shine on their own. But I also love adding them to oatmeal for some crunch.

    I absolutely love salty nuts paired with sweet things, like apples, chocolate, grapes.. I bet I get most of my daily caloric intake from almonds. Once I pop, I just can’t stop!!

    Spiced nuts are my favorite Christmas time snack!! I’ll eat nuts salted, raw, in trail mix, by the handful, as butter… you name it! And pecans are my favorite too!

    My favorite way to enjoy nuts is nut butter! I would totally turn those nuts into a nut nutter and top my oatmeal with it and put it in my smoothies! 🙂 I also love just to snack on honey roasted nuts. Soooo good.

    My favorite way to enjoy nuts is about a simple as pop them in my mouth and chew! I looove pecans (but pretty much any and all types of nuts) especially on salads!

    So many opportunities for TWSS jokes…
    but I like my nuts – almond preferably, roasted with seasonings, and ground up into a smooth almond butter, on top of some oatmeal or toast. Yum!

    I love eating almonds plain and in oatmeal or yougurt, peanuts plain or with an apple, and I love walnuts or pecans in my oatmeal (or by themselves) butter toffee pecans sound amazing! 🙂

    I love nuts in salads! My favorite new salad is spinach, apples, almonds, raisins, and PB2 ( as the dressing) Yum!

    Honestly, I love eating just plain almonds as a snack. So tasty. I don’t need anything super fancy (though I certainly won’t pass it up if offered!)
