Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    i actually fill a little jar that i keep on my counter top full of nuts. it’s a great snack to tide me over until my meals!

    I love nuts (especially cashews)! Sweet or savory, they are the perfect natural crunchy snack as long as you munch in moderation!

    I’m a plain jane peanuts and raisins kinda gal. And if I’m splurging on pistachios, they’re so fabulous they get eaten alone!

    I usually just enjoy them au naturel, but I also love adding them to oatmeal, salads, or turning them into a spiced nuts. And who can forget, making them into a butter?!

    by the handful, in my greek yogurt, in oatmeal, mixed in quinoa, in chicken stir fry…the possibilities r endless!!!!!!!!!!!!!!! 🙂

    Oooh hard choice! LOVE pecans, cashews, almonds and walnuts. Those roasted nuts you get around the holidays are so so good! I think pecans win… because theyre the most versatile!

    Those toffee pecans sound to die for! My favorite thing to do with nuts is either to make them into a butter or roast and put them in between a banana or carrot cake. It adds a perfect crunch!

    I just like eating nuts by themselves! They make a great snack on the go! Or making granola bars with them. YUM!

    I love eating my nuts in a homemade trail mix! I add in my favorite nuts, peanut butter puffin cereal, dried fruit and candy pieces 😉 YUM!

    I love snacking on nuts on their own or mixed up into protein balls that I make by grinding together almonds, dates, banana chips, Graham cracker flavored protein powder, and agave!

    so many different ways to chose from….from a handfull of plain nuts to walnuts in chocolate brownies, nuts in my oats, nuts mixed with my cereal, nuts on my salad (especially walnuts or almonds and feta with spinach), nut butters, nuts in my yogurt, trail mix (one of my ultimate favorites)…..
