Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    When my smoothies are super thick and eaten with a spoon, I love to top it with chopped nuts! Pecans and almonds are my favorite!

    I love all nuts, but my absolute favorite is when there are candied walnuts in a winter salad with pear, goat cheese, beets and light mixed greens 🙂 (and anything that is chocolate covered too!)

    I love making fresh, homemade peanut butter with peanuts. Other favorites (almonds, pecans, walnuts) are a perfect on-the-go snack!!!

    I love all types of nuts! Just something about the crunching really is addicting! I love them especially mixed with a lot of dried fruit! Now I’m craving some walnuts…good thing I just stocked up…

    Aside from eating them by themselves, I love throwing them into my oatmeal! My fave oats are banana, pecan, cinnamon, ground flaxseed, and recently chia seeds – yum 🙂

    I love all kinds of roasted nuts! almonds and cashews are my favorite..cover them in decadent dark chocolate and I am going to need a quiet, undisturbed moment to myself =)
