Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I put them in salads. I’m not a big fan of them plain, but they really step salads up to the next level!

    I LOVE nuts! I like to eat them by the handful, but I generally like them by themselves – not mixed in with other foods.

    I enjoy them as a snack at my desk almost every day! I also enjoy sending nuts to my deployed husband since it’s a perfect snack to keep him fueled. We’re a big nut family ; )

    I love plain old cashew right of the jar or sitting in my grandparent’s backyard cracking pecans and eating them on the spot. Yum!

    I love to roast pecans with a little bit of brown sugar and cinnamon on top!

    Or, I like to put them in a salad with other fresh fruits. Adds a nice crunch!

    I like nuts along with some fruit. The protein makes the snack more satisfying. Of course I love nut butters of all types too 🙂

    I like lightly salted nuts, particularly Brazil nuts the best. A close second is candied walnuts or pecans on a spinach salad. Yummers!

    I love them in oatmeal, desserts, salads…but right out of the bag is preferable! Pecans are great too–especially the cinnamon sugar ones (which aren’t exactly great for you, but they taste great)

    I love adding nuts to big batches of granola that I bake up–they provide such a great variety of crunchiness! 🙂

    i love just snacking on nuts, or I really, really love eating some silvered almonds, pecans or cashews in salads with fresh or dried fruit.

    I’ve ordered from nuts.com before. They have some really great stuff. I buy raw nuts and roast them myself. I love cinnamon roasted almonds.

    I love nuts just for snacking. I always have bags of walnuts, pistachios, and almonds on hand! And they are amazing is salads too!

    I recently did a bit of a ‘review’ of nuts.com myself, it’s my favorite bulk food place online! Great service, great company.

    My favorite nuts are the roasted walnuts and I eat them on greek yogurt and my oatmeal in the morning.

    Currently my favorite is In Greek yogurt. Currently my favorite combo is Chobani Apple Cinnamon with Pecan pieces. Delicious!

    I absolutely love trail mixes/nuts! I usually take a small bag of them with me to munch on in between classes! This usually works best because if I bring the whole bag with me while sitting on the coch watching tv, before I know it half the bag is gone 🙂
