Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    Santa left some buttered toffee almonds in my stocking this year and I sprinkled a few into my pancakes while they were on the griddle. So yummy!

    I eat them everyday for the Omega-3s! I stir them into yogurt for breakfast and that’s my fav way to eat them!

    I must admit, pistachios are my absolute favorite! There’s something oddly satisfying about having to put a little work into cracking them open before getting to enjoy!

    I never used to like nuts as a child, but I have come to love them in the past few years. Some favs: walnuts, macadamia nuts, and pecans. Yum!

    I have just started getting into nuts. I like adding sliced almonds or chopped walnuts to oatmeal and yogurt. I like eating a handful of pecans for a snack. And of course I am addicted to any kind of nut butter.

    I need nothing to go with my nuts, especially toffee ones! I eat them right out of the bag…not so good for portion control 🙂

    Ahh this snack is my favorite but it is SOO dangerous. I will take nuts (favorite is cashew) and stuff them inside of dates. Sweet n’ salty!

    ANY WAY to enjoy nuts is how i like to eat them- im obsessed w nuts and nut butters so as long as im eating them im happy!

    Yummy lunch! My fave nuts are pecans as well and my favorite way to eat them is either in my oatmeal or yogurt. And toffee pecans sound AMAZING so I’d probably eat them plain 🙂

    I love all nuts! I always say,
    “I’ve never met a nut I didn’t like!”
    Har har. But it’s so true!

    It depends on how I’m eating the nuts-by themselves or IN something.
    For general snacking (which is how I consume most of nuts), almonds and honey-roasted peanuts are probably my favorite.
    At Christmas time, I eat more pistachios and brazil nuts.
    Walnuts are great in brownies.

    Yes. I agree to keep it PG 100%….but oh, how the mind wanders. *wink*

    My favorite are walnuts!! I like them raw, and I throw them in yogurt, oatmeal, or eat them plain. They are one of my very favorite foods!
