Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I love a serving of nuts for an afternoon snack or before a workout. It really seems to do the trick to hold me over until my next meal!

    I LOVEEEE sweet and salty trail mix from trader joe’s!! It comes with almonds, peanuts, and cashews + golden raisins, cranberries, white chocolate, butterscotch, and chocolate chips!

    I LOVE all kinds of nuts, especially pecans! They always remind me of the holidays too, like pecan pie yum! I love them in my morning oatmeal, on salads for that extra crunch and also my go to snack out of a bag for a healthy fat punch 🙂

    Mmm butter pecan sounds amazing. I love nuts while hiking and on their own, but also or on top of yogurt or salads!

    My grandma used to make cinnamon sugar pecans for Christmas. I have the fondest memories of munching on handfuls of them!

    I love chopped walnuts in an omelet! Added to an omelet with spinach and even some hummus, walnuts add a fantastic crunch! 🙂

    I like to eat the deluxe mixed nuts with my dad while watching TV. We always joke because he always picks out the best ones (cashews)!

    I love nuts, especially almonds and pecans! I’ve recently started adding almond slices to my strawberry spinach salad and it’s amazing!!!

    I don’t care for nuts in cookies, brownies, or breads. I’d rather eat them plain and not mixed with anything. The best ones I’ve had are at Cabella’s – they have a type of candy coating for nuts and when you get them they are fresh and warm. The pecans are my favorite 🙂
