Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I got some cinnamon spiced almonds around Christmas time that are the best snack ever. Well after PB on anything that is 🙂

    Haha. MMMMM I love nuts on top of cereal, ice cream, yogurt, or salads (pretty much everything. hah) AND I love nut butters! YUMM

    I love nuts! I eat them as a mid afternoon snacks to curb hunger. I usually have a handful of almonds and it keeps me satisfied until I get home at about 7p for dinner. I also love putting them in pancakes or over yogurt or mixing them with raisins for a trail mix.

    I love mixing rice and kielbasa together, and then adding cashews on top. It sounds weird, but it’s so delicious!

    I really love cracking them over the holidays. It’s a tradition in our home to buy a big sack of assorted nuts (oh dear…) and crack them while chatting around the table (typically AFTER we’ve already ate, ha!). My favorite to crack are walnuts (so satisfying with that HUGE shell). 🙂

    One of the most nostalgic memories from my childhood was eating pecans wrapped in slices of American cheese with my great aunt after church. Sounds odd but it’s o so good!!! I also like the candied pecans sold at the mall around Christmas!!

    Ooohhh Julie, this is my giveaway, you have no clue! I absoulutely love nuts, and pecans are my favorite too. I love the cinnamon sugar ones you get at places like the mall. I enjoy eating nuts by the handful.

    I’m loving nuts in my salads right now – but that’s something I only eat at restaurants. Would love to make them at home though!
