Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    I am also a nut freak, and I love to almonds and apple slices for my work snack, and just grab a handful of anything when I need protein on-the-go!!

    Oh how I LOVE nuts! I don’t think there is any nut that I do not like! I enjoy nuts in trail mix, nut butters, in baked goods and all by themselves too! Nuts are the perfect morning, afternoon or evening snack! 🙂

    I love nuts in my yogurt, trail mix, or just in handfuls for snacks. I eat them after long runs to replenish the salt I lost while sweating (that, and because they are delicioso!)

    I love snacking on nuts! I am particularly obsessed with almonds and walnuts although peanut butter is my favorite food EVER. These sound so yummy…

    I just made homemade larabars by blending pitted dates, walnuts, and cocoa powder. OH MY GOODNESS it was sooo good new favorite way to eat nuts! portable and easy to make too 🙂

    up until about a year ago i thought i hated ALL nuts… what was i thinking? Now i would have to say walnuts are my favorite, followed closely by almonds and pecans… although nothing like a bag of peanuts at a ball game!

    I can’t be trusted around a container of nuts – I got to town on them! I try to keep it under control by adding a handful to salads or mixing them into granola to put on yogurt. The best way to enjoy them (let’s be honest here!) is toasted and stirred into cookie dough 😉

    I LOVE nuts 🙂 I like to eat them as is as snacks or add them to plain greek yogurt or oatmeal.. Only problem is I have no self control when it comes to nuts haha

    I really like nuts on top of salads…salads with fruit, grilled chicken, and nuts on top of a bed of dark greens are one of my favorite foods.

    Aaah I hate american mayonaise as well!!

    BUT.. big BUT here.. You should defenitely try real Belgian mayonaise.. Really, there is such a big difference..

    Real mayonaise tastes like heaven on french fries.. If you’re interested, I can always send you some Belgian goodies ( we do have some amazing beers and chocolate) I would love to get my hands on some kashi go lean cereal.. Can’t find it anywhere here in Belgium..*sad face*

    I love adding nuts to my salads. I will buy a bag of trail mix that contains nuts/ seeds/ dried fruits to top my salads. So yummy

    Ever since I stopped eating meat 10 years ago, I started eating nuts every day to up my protein intake. I like them straight up. I love any sort of candied/glazed nuts but I go through those waaay too fast. A Boston area favorite is Q’s Nuts, http://www.qsnuts.com/. He makes awesome flavors like Mexican Chocolate almonds, Key Lime Ginger Cashews, and Bananas Foster Pecans.

    I LOVE to enjoy cinnamon sugar nuts around the holidays (though rarely any other time, they’re addictive!) Other nuts are great as a snack, or some toasted walnuts with feta cheese in a salad! I SWEAR it tastes like white cheddar popcorn!
