Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    Butter toffee pecans sound like the perfect combination!! Nuts are always so satisfying and I could eat them by the handful!
    I also enjoy chocolate covered nuts 🙂

    Yum! I love eating them on their own as a snack – we roasted some almonds with a bit of chili powder…so good!

    I like them just on their own for a morning snack…but I LOVE them chopped up in my oatmeal. Yummy 🙂

    I LOVE dark chocolate covered almonds and I love pistachios. Once I start though it’s hard to stop eating them!! Also, almond slivers, craisens and feta cheese in a simple spinach salad. delish!

    Well, if I am being healthy then I love my nuts in peanut butter, and in moderation in my yogurt 🙂 But if my willpower is not so great… I love almonds in Dairy Milk bars, peanuts in Oh Henrys, and as many salted cashews that will fit in my mouth!!!!

    Those pecans look delish! My favorite way to enjoy nuts is to put them in a salad. The pecans look like they’d be great thrown into a spinach, strawberry & feta cheese salad. Yum!

    I always say I can never be trusted around nuts…I tend to eat a few servings in just one sitting 😉

    I love mixing chopped nuts into my Greek yogurt or oatmeal for a little added crunch!

    My hubs and I love to add nuts to everything! Especially love snacking on them with wine and cheese! Or salad, yogurt or oatmeal… 🙂

    In just straight up peanut butter form on a spoon, in oatmeal, with apples, on my finger, on crackers, on celery etc. etc. etc. I’m addicted!
