Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    My favorite way to eat nuts is by the handful 😉 Other than that, I’m game for pretty much anything…stirring them in to Greek yogurt and munching on them in my salads are two ways that I love!

    I love them all on their own.. but if I do mix them into something its either oatmeal or quinoa!

    I’m CRAZY for nuts! I love them in yogurt and mixed in salads but my favorite is probably covered in dark chocolate!

    Yum! I always keep nuts in the house. My favorite ways are putting walnuts in my oatmeal and almonds in chocolate desserts (oatmeal fudge bars topped with sliced almonds? Yes please!).

    Is there anything better than just plain old salted cashews?? I don’t think so! My husband brought home a small tin of them one night and I ate them all in one sitting.

    Also, nuts in any dessert is also fantastic! Cookies, cakes, pies, etc. I don’t discriminate!

    LOVE pecans in salads, cashews in stir fry, and sliced almonds in yogurt or oatmeal- any way you have them, they always add some flavor

    TJ’s makes AWESOME dark chocolate almonds. stirring them into oatmeal with peanut butter on top? heavenlyyyyyyyyy.

    I love to make my own trail mix with raw nuts and dried fruits but my favorite way is to make homemade nut clusters with almonds, pistachios, & walnuts and dunk a tablespoon or so into dark chocolate and freeze it. Perfect healthy cure for a sugar craving!

    I love plain nuts, but my favorite way to eat them has to be my dad’s homemade roasted pecans–he only makes them at Christmas!

    Any nut when convered in chocolate or in trail mix with dried fruit or as a nut butter! it’s too hard to choose

    My favorite is candied pecans, but I love almonds and cashews and peanut butter of course too. By themselves or on almost anything.

    ahhh pg? lame! haha jk. well i like to snack on them just plain..but i just made granola bars and put some almonds in those and they’re great! they’re good in oatmeal, cottage cheese, yogurt, basically anything!

    Gotta say, praline ones or caramel covered ones with some caramel popcorn is the absolute best way to eat nuts! (Though what I eat the least!)

    I like them plain but also sometimes the dark cocoa roasted almonds are good and so are the sweet and salty mixes!

    I didn’t like nuts for a while but now I’m coming around… I like them in trail mix and I love just eating pistachios. I should probably start adding them to my salads more often!

    I love nuts on salads! Candied pecans on spinach salad with fig and honey goat cheese. Cashews on a garden salad with feta and ranch!!! So yummy!!!
