Cornucopia of Color

This weekend when I was driving to dinner with Ryan and my sister, we passed a billboard for a fast food restaurant. A plate of fried food was displayed on the billboard and I couldn’t help but notice the lack of color in the meal.

Between the fried chicken, French fries and biscuit, the entire plate was a boatload of beige!

One of my favorite things about eating fresh produce is the abundance of vibrant colors the foods bring to a meal.

Colorful Lunch

My lunch today was a cornucopia of color, all attributed to the fresh vegetables I bought at the farmer’s market on Sunday.

My plate included:

  • Grape tomatoes
  • Carrots
  • Cucumbers
  • Green peppers

For a protein punch, I also ate fresh egg salad, made with two hardboiled eggs and one egg white, light Miracle Whip, Dijon mustard and relish.

  • I went camping
  • I made pancakes using Greek yogurt
  • My sister, Ryan and I enjoyed a tasty dinner

    BEAUTIFUL! I am always a proponent that we eat with our eyes and anytime you can make a meal more visually appealing the better I think it tastes!

    Part of my food philsophy is that we should eat a variety of colors with every meal. The more colors on the plate, the greater the variety of vitamins and nutrients we enjoy with our meal. How can you ever go wrong with that, I ask?

    hahaha oh my god i alwaaays look at other peoples plates compared to mine and think wow there’s NO color on their plate! the more rainbowish the better tasting in my book 🙂

    That plate is colorful! Love it! Honestly, though, I can’t handle boiled eggs with mayo… but everything else looks delicious!

    Looks great! I also try to use as much colour as I can – it just makes things so much more interesting! I also enjoyed a bit of egg salad on the weekend. The taste fully compensates for the bad smell haha! 🙂

    i had a meeting with a nutritionist about a year ago and she told me that she had read a bunch of studies about how eating foods with many different colors helps to fight off cancer!

    Colorful foods are SO MUCH more fun!
    And I love how different colors are atrributed to different health benefits too! 🙂 I added lots of colored veggies to my lunch today too.

    That lunch is seriously gorgeous. There really is something so much more satisfying about eating a colorful lunch…especially when you know how much those veggies are doing your body good! And like all the top chefs know…we eat with our EYES first!

    I absolutely love it when my food is pretty! Then again, I look down at my food and feel a little silly. Nuts, banana and cereal. A little beige here today!

    Mmm… egg salad is one of my favorite foods, but I haven’t had it since Easter! Looks great; occasionally I’ll try and see if I can get every color of the rainbow into one meal. Its another fun part of being healthy!

    colorful foods are definitely more fun to eat. yesterday i ate 5 fruits and 3 veggies..it was definitely a rainbow!!
