Easy Beef Stew

It’s a dreary day in Orlando.

beef stew 030 The pitter patter of raindrops on our apartment roof had me craving warm comfort food.

When I think of comfort food, I imagine meals that cook all day long and make the whole house smell incredibly delicious.

Unfortunately I wasn’t in a patient mood and wanted some quality nourishment fast!

I did quick scan of goods around my kitchen and figured I had all the ingredients to create beef stew.

After slicing, dicing and simmering veggies and beef for about 30 minutes, I had a bubblin’ pot of hearty beef stew! beef stew 011beef stew 017Easy Beef Stew

Ingredients

  • 1 lb. beef, cut into cubes (I used eye round because it’s cheap!)
  • 3 large red potatoes, chopped
  • 3 large carrots, chopped
  • 1 medium onion, sliced
  • 1 can beef broth
  • 13 oz. beef stock
  • 1/2 tbsp. worcestershire sauce  
  • 1 tsp. thyme

Directions

  • Sautee onion and carrot in a deep pot coated with cooking spray
  • Add potatoes, beef broth and beef stock to the onion and carrot and let simmer for 5 minutes
  • Add beef, worcestershire sauce and thyme to the pot and let simmer for 20 minutes, or until potatoes are tender and beef is cooked through

Note: This recipe serves 2 – 3 people (Ryan and I finished the whole pot between the two of us and both had two bowls)beef stew 023

Honeymoon Hiccup

It’s official… we are not leaving for St. Lucia on Friday for our honeymoon as planned. The resort where we were planning to stay is not welcoming new guests until late next week, so we’re scrambling to make other arrangements.

We are thinking of postponing our St. Lucia trip, but we’re also considering revamping our plans completely and finding a new destination so we can still leave for our honeymoon on Friday.

If you guys have any last-minute travel advice or know of any resorts or travel websites that offer wonderful deals to guests who book a trip at the last possible second, please share!

    Hey Julie, the stew looks yummy! I also LOVE travelzoo.com, they have some great last minute vacations at reasonable prices. I also had a few friends in past who used Apple Vacations and they got good deals. So you may want to check them out as well. Hopefully you guys can find a new spot in no time and be on your way to Honeymoon whooo!

    Perhaps you could call some of the other destinations you and Ryan had targeted earlier and see if they’re offering anything to people whose vacation plans are changing due to the hurricane. You never know, you might spark a marketing ploy for a resort!

    So sorry…what a major bummer about your honeymoon!! Stupid hurricane. As many have recommended, travelzoo.com is a great website for last minute travel deals. I know you guys were so excited about St. Lucia. Maybe you can plan a romantic get-away weekend, than go to St. Lucia in a few weeks/months. Happy (re)planning! You and Ryan will be able to laugh about this in a few years…:)

    What about Jamaica??!! I’m going there this weekend for a wedding and the weather seems to be fine – just a few T-storms on Friday and then clear the rest of the weekend. The hurricane is not touching on the Caribbean so everything seems to be fine. We’re staying at Sandals Montego Bay resort – maybe check that one out?! Good luck – and whatever you do – as long as you’re together you’ll have a blast! 🙂
