Eat My Words

Sometimes I have to eat my words.

Remember when I said I much prefer icing to cake? That cake is bleh and icing is heaven? Though I still stand by this for the most part, today a coworker brought in a beautifully decorated carrot cake made by his wife that had me second guessing my thoughts.

The cake was dense. It was moist and full of texture. Walnuts. Raisins. Carrot shavings. I was in heaven!

A Slice is Nice (But I Prefer More!)

This cake took the… cake. Move aside icing! (Just this once, though, okay? You know I love you too much to banish you forever.)

Since today is Foodie Friday in my office, there was no shortage of treats on hand. In addition to the carrot cake, we also had fruit pizza!

Fruit Pizza

One of my coworkers, Jen, made the pizza by spreading strawberry cream cheese sweetened with a bit of sugar on top of thin pizza crust before topping it with fresh fruit.

Lunch

All the fun treats I enjoyed sure do make my lunch look a little lackluster, but I still gobbled it up.

Lunch

Today’s lunch included:

  • Muenster cheese and raspberry jelly bagelwich
  • Roasted curried cauliflower
  • Carrot stick

Unfortunately I slightly burned the cinnamon raisin bagel thin in the toaster. The crispiness took away from the doughy texture I’ve come to know and love in my typical bagelwiches, but it was still purdy good.

Off to power through the last few hours of the workweek.

It’s date night tonight! 😀

    Your co-worker’s wife made that cake?! It’s beautiful and looks professional done! I love carrot cake! It’s definitely one of my favorite cakes. 🙂 I wish my work had Foodie Friday!

    You should try adding spinach and egg whites to your jam/cheese creations…YUMO!

    Holy icing! I have never seen a carrot cake with that much icing! For a minute I thought it was going to be a cake-wreck! I’m glad it was A-okay 🙂

    My bff and I talked about your bagel sandwich combo this week. We are both oddly intrigued even though right off the bat it doesn’t sound like a good mix. What made you try it out? Think I might have to try it soon…

      okay, honestly? it was the mcdonald’s mcgriddle. i was talking to ryan about how GROSS i thought those sandwiches sounded – combining syrup-laced english muffins w/ egg? nasty! but i figured if so many people liked the odd sweet/savory combo, i should try to recreate it in my own way. turns out i LOVED it. 🙂

    I totally agree- cakes that are more than just vanilla or chocolate have the ability to trump the icing. But overall, icing is the most important part…. wow, my mouth just started watering 😀 haha

    That cake is GORGEOUS. At first I thought it was one miniature cake… super cute!!

    And McDonald’s McGriddles are amazing by the way. I really have no problem steering clear of fast food- the idea of eating food that is so fake skeeves me. Micky D’s breakfast, however… a whole different story. Sandwiches made with pancakes are my weakness. 😀

    Never tried the McGriddles, but have you heard of Roscoe’s Chicken and Waffles in Los Angeles? http://en.wikipedia.org/wiki/Roscoe's_House_of_Chicken_and_Waffles

    Sounds gross, but the palate can’t deny the right combo of fat, sugar and salt. (drools) LOL I guess I didn’t make it any more appetizing. 😛

    I love carrot cake. It was going to be my wedding cake…until I tasted red velvet. Oh what I had been missing!

    And I made your roasted curried cauliflower recipe last night. I absolutely loved it! I made the whole bag of cauliflower, intending to save half for lunch today, but I literally ate the entire bag in one setting! Thanks for veggie inspiration!

    Mmmmm Carrot Cake! We have a parent at my school who brings in a homemade carrot cake each year at Thanksgiving. It is like 4 layers tall and AMAZINGLY delicious. If you don’t get a piece within the first hour then you are out of luck. It disappears so quickly.

    If I was superman, carrot cake with cream cheese frosting would be my kryptonite. Thanks for making me insanely jealous! 😛 I’ve been trying to cut back on sugar, but now I want to go bake a cake…haha.
    I have never worked anywhere with a Friday Food day!! That would be TGIF times 1000! You are so lucky! 🙂

    I almost always hold off of the cake and double up on the icing…but there is just something about GOOD carrot cake. it definitely “takes the cake!”

    Yay for date nights! My husband has been basically living in a different city for work for the past month, and at least for the next two. I really can’t wait to just see him for a whole weekend! He gets home late Friday night and then leaves Sunday night or early Monday morning.

    It’s the pits. So I’m living date night through you tonight!

    ohhhh man. That cake looks SO good… Carrot Cake is one of my alltime favs! (Behind Red Velvet, of course…and anything PB & Chocolate). I seriously cannot believe your coworkers wife made that. Was there a special occasion?

    Oh, and have fun on your date night! I stole your idea and (my) Ryan and I have been doing that since Sept, it’s sooo much fun!

    I love carrot cake so much! It is the one cake where I feel too, feel like I enjoy the cake and the icing equally! I always make one for easter, a massive one I should add and eat leftovers for a week!

    While I’m not a fan of carrot cake, I love it when cake is super dense and moist. That’s exactly why I think it’s on par with icing. 🙂
