For dinner I made eggplant medallions, prepared the same way I made them last week, but without chicken and with Brie instead of shredded cheddar cheese.
On the side I enjoyed roasted cauliflower, which came out of the oven first and was devoured before the eggplant medallions were done cooking.
Sometimes ya just can’t wait!
I also enjoyed three large Monterey Pasta Company lemon shrimp ravioli, which I received from the company to sample.
I was a little apprehensive about this particular flavor because a lemon flavor in ravioli didn’t really call to me.
I was pleasantly surprised though and really enjoyed the big chunks of real shrimp meat in the ravioli.
Though dinner was yummy, dessert was yummier.
Dessert
Tonight’s dessert was comprised of only three ingredients. Three *delicious* ingredients:
- 1 egg
- 1 c. sugar
- 1 c. peanut butter
Combine those three bad boys and bake at 350 for 10 minutes and what do ya get?
Flourless peanut butter cookies!
For as much as I love peanut butter, I have a hard time finding really good peanut butter cookies.
I often think peanut butter cookies are too dry or floury. I want moist peanut butter goodness and – trust me – these cookies deliver.
Sadie was loving the leftover peanut butter.
I had three bite-size cookies for dessert.
The cookies don’t really expand in the oven, so the dough is perfect for shaping into whatever shape you want.
Since Ryan is out at a soccer game right now, I made him three special cookies to enjoy when he arrives home:
I hope he likes his sweet treat! (I assure you the cookies will be devoured by the cookie monster *me* if he doesn’t 😉 ).
Hmmm…are they soft and chewy Julie? I think that many flour less desserts typically are?
yes m’am!
YUMMM those look amazing but dangerous! Whenever I have small cookies I end up eating WAY too many because I can not say no! However, I might have to try these with almond butter anyway.
all i can say is i’m making these this weekend…i mean, sweet warm gooey peanut butter? does it get any better?
Yum!! I am trying those for sure!
MUST MAKE THOSE!!!
In Canada we sell KRAFT peanut butter.
This recipe is on the back of all of the tubbs.
If you ever come to Canada….take home a tubb of Kraft Peanut butter…all my american friends request it 😉
if you made them with nutella, would you leave the sugar out???
OMG YUM! I wish I had PB in the house, I would make them tonight!
Awww, you are too cute! 😀
Those sound fab…I am making them this weekend!!!
Those cookies look so good! I love PB, but in the past PB cookies have always not lived up to their name. Can’t wait to give these a try 🙂
I just followed your recipes and made cookies for my boyfriend. Mmmm! Easy and delicious. I agree: Most PB cookies are too dry. But these were perfect! 🙂
so glad you liked them!
OH. MY. GOODNESS.
The second I saw those cookies I ran to the kitchen to try them. There’s nothing worse than dry cookies and these are the total opposite. They are so easy! I did half the batch plain and mixed chocolate chips into the other half. Might be the best thing I’ve ever eaten!
woohoo!
Omg Julie, once I saw this post I headed straight into the kitchen and made them. They were amazing!!!! thanks for the great recipe!!!
thats so cute!
I’ve successfully made these with Splenda and Eggbeaters, too! YUM! They aren’t AS good as the real deal, but they’re great in a diet bind! 🙂
What an easy dessert recipe! Very cute with the cookies for Ryan.
im amazed that only 3 ingedients turn into a cookie! awesome!
You & Ryan are sooo cute. I’m sure your wedding is going to be the most beautiful day – I can’t wait for October! <3
These look amazing Julie! About how many did the recipe make?
Those cookies look wonderful!
Wow whatta great cookie idea!!
I have made those before…they are awesome!!!
Julie-
I also love PB but don’t like PB cookies! They never have much flavor and taste oily and dry. These look delish – a must try this weekend.
My kids with thank you!
Jocelyn in the STL
I make these cookes too Julie! But usually use brown sugar instead of white sugar…I’m sure these taste just as good!
I am going to try these cookies. Great idea!
I make these as part of my contest prep to help with the sweet cravings. To help clean them up a bit, you can use splenda and an egg white and get the same thing, just a little bit more crumbly. SO GOOD!
What a great idea as well! thanks for sharing this caroline!!!
Loving this recipe!!!!!!!!!!! Yummy!!!!!!!
and I love the th special ones you made for Ryan!!!! I bet he loved it!! And loved the cookies!!!
I like to bake brownies or cupcakes and write love things as a suprise on them for my fiance, I write stuff on there with the candy gel stuff! Have a great day girl!!!
I have made those Peanut Butter Cookies before! a friend in class gave me the recipe and I couldn’t believe it was so simple. I went home and tried it out right away! Delicioso

Aww- you are so sweet 🙂 I’m sure he loved coming home to that nice surprise!
That is adorable that both you and Sadie love the peanut butter. The cookies look delish – its awesome that they are so simple and can be made in a pinch.
that’s how i make my PB cookies! easiest recipe ever.
I made these but only made a few out of the recipe because I ate a crapload of the dough…not good for my wedding dress body!! This stress is getting to me! I have eaten all weekend…I need some inspiration girl!!
I ended up eating more dough than I made cookies…but soo good!! That is not the way to get into my wedding dress and honeymoon bikini in July!! This wedding stress is killing me!! I need some of your inspiration girl!
yep yep need to make those! my love for pb and easy recipes in ONE!
what kind of pb do you use? i find thats a big criteria in pb cookies 🙂

I LOVE peanut butter, and these look like heaven! Just posted a way to use up the last of the peanut butter that’s stuck to the jar, for whenever you’re running low: http://eating-made-easy.com/2010/05/26/asian-peanut-dressing/
I make a flourless peanut butter cookie too for my boys! They really are so good. People are always surprised when I tell them there is no flour in them! Cute cookies man!
