Dinner

A benefit of staying at your parents’ house?

Homecooked meals by your mama!

Tonight my mom prepared grouper, sautéed in olive oil and seasoned with cloves, garlic salt and Old Bay. (<—Love that stuff!)

This woman knows how to cook fish! My dad is an avid scuba diver and spear fishes whenever he gets a chance, so my family always has fresh caught fish on hand in the summer and my mom has prepared more than her fair share of fish for our family.

With the fish we had sautéed onions and green beans with chopped almonds.

A winn-ah of a dinn-ah. Open-mouthed smile 

This dinner got me thinking about what dinner entrée I hope I’m known for when Ryan and I start a family. What meal (not dessert) would I want my future kids to rave about?

In the end, I narrowed it down to these dishes:

  • Lasagna (Because really good lasagna is REALLY good)
  • Homemade chicken noodle soup (Because chicken noodle soup heals everything from a sick child to a heartbroken teen)
  • Crab cakes (Because good crab cakes are very hard to come by)

Question of the Night

  • If you could be known for one main entrée dish, what dish would you want to be known for?

    That Grouper looks incredible, yum!
    Your parents are so cool– your Dad spearfishes, and you Mom cooks up the fish to perfection. That’s awesome!
    I’d like to be known for something unique, my partner and I love hosting our families and together serve up a mean brunch. We’re both pescetsrians (vegetarian except for the fruits of the sea), so perhaps my shrimp linguine? Or maybe my vegetarian walnut meatloaf?
    Right now I’m best known for my White Russian Cupcakes, that’s my go-to tailgate or party dessert.

    My parents have cooked amazing foods my entire life, my dad’s soups and chilli, mom’s spaghetti and enchilladas…I’m not sure what I hope to be known for, but whatever it is, I hope it’s known for being good and not bad!

    I asked my son, and he said he likes my homemade pizza the best… seeing my family tries to talk me into it every week, it probably is that. As well he said homemade bread and soup, and lasagna, I don’t know all your food is good Ahh.. I love my kid!

    Home made dinner is the best, especially if your mom is a good cook. Actually I’m more into desserts than main dishes so I’d like to be know for my sweet dishes ^^

    YUM!! Lasagna is a good one- the ultimate comfort food in my book. I think mine would have to be:
    1- Baked eggplant medallions with homemade marinara
    2-Blackened Salmon
    3- Grilled Chicken Cordon Bleu (before me & the hubs went pescatarian!)

    I’d love to be known for making a mean pasta dish…anyone can make pasta so it would be pretty cool to be able to make the ultimate pasta!

    I am actually known to make a mean cauliflower soup,…also whenever I cook eggs they turn out really good 🙂 I have never tried/heard of grouper before!

    I swear, food made by my mom always tastes so much better then if I had made it myself. Mom’s have a special touch! 😉 My specialty is pistachio encrusted chicken. It’s so delicious!

    That fish looks great! Fish is pretty much the only meat I miss since going vegetarian.

    I would love to be known for something like eggplant lasagna or eggplant parm, with homemade breadsticks. My mom makes the most amazing breadsticks and rolls – so good that I look forward to those more than anything else at Thanksgiving.

    My husband raves about this angel hair pasta dish that I make with grilled chicken in a lemon garlic sauce with capers and artichoke hearts, but as I’m trying to cook healthier and switch to more clean eating I’d like to be known for my homemade sourdough bread warm from the oven with the Greek Lemon Chicken soup that I’ve yet to master.

    I hope by the time I have kids I will have learned to make some actual meals. I would hate for my kids to rave about my oatbra. “My mom can microwave Bob’s Red Mill like no other!”

    I make a fantastic lasagna that my fiance loves! I also make a really great artichoke and spinach dip 🙂

    It’s such a great feeling having someone that you love say to you “can you please make me your _____??”

    In my dream world, my futurekids will LOVE all the healthy meals that I make them. But let’s be honest, chances are they’ll end up like most kids on that Tyson’s chicken nuggets commercial, being all like “I don’t like saw-sage.”

    However, I think I could whip up a killer meatloaf that’ll have them raving.

    Definitely meatballs, lasagna and ziti, just like my mom. She makes the best of these Italian dishes and I always find them to be so comforting and so ‘home’. I would love to master them too and continue the tradition!

    There’s a Finnish bread called Pulla that my mom and dad make at Christmas but apparently it takes all day to make. I want to master it those since it’s part of our heritage.

    I love the chicken noodle soup idea! That is something I would want my mom to make. 🙂

    I also want to be known for lasagna. When I think of my mom’s cooking I always think of lasagna and it’s just so comforting! I hope to continue the tradition (the recipe has been passed down 4 generations) and make this for my kids!

    I would have to say the meal I’m most remembered for was for Halloween when my kids were little. Getting into the “theme” of things I made “Bloody Brains” (ruffle macaroni & cheese, baked in a pyrex bowl and unmolded onto a plate, then used a ketchup packet to squeeze squiggles of blood on) and “Eyeballs” (deviled eggs with a slice of olive). The boys were so grossed out they wouldnt eat! I had to make them instant oatmeal instead! I would love to be remembered for Thaksgiving dinner and cookouts, but the most requested things from the kids are my brushetta with chicken and pastelillos. My Stepson always requests “those oreo things” (crushed oreos mixed in with white chocolate and dropped by small spoonfuls into mini muffin cups) and the other day he emailed me for my spaghetti and meatball recipe…

    The meals I make that are most requested by my husband and guests are:
    Manicotti with arrabiata sauce
    Chicken enchiladas
    Lambchops with rosemary balsamic reduction
    Steaks with gorgonzola

    and then of course desserts! If we have kids one day I hope they will beg me to cook certain things for them over and over again! Creative question – I loved it!

    I’m definitely known for my vegan spinach artichoke dip. It’s super delicious but also pretty pricey, so I only make it for very special occasions.

    My ‘one hit wonder’ of course! LOL My husband named it that. I don’t cook and when I do I kinda suck at it. But when I make my chicken and cheese enchilades they never last. Yummy….so yummy I make it for myself on my birthday. It’s a pain in the butt to make but so worth it. I have no control when it comes to this dish. My healthy eating goes out the window until all bites are gone. I do try to pass it along to other family members but I can’t help it if I hide a stash just for me. : )

    What an interesting question! I would want to be known for something that’s uniquely mine. My mom makes these oatmeal and chocolate chip bar cookies that are absolutely to die for, but you can’t find anywhere else. My dad made up this ham casserole recipe a few years back that I’m obsessed with. I’d want to be known for something like that–something that I made up, not something that I make really well from a cookbook.
