Made It On the Wall

Hi there!

I’m home from work and so psyched that tomorrow is Friday.

Work + Lunch

Today was a typical work day: Personal training + Teaching group exercise

Oh and look who officially made the personal training and group exercise wall at the gym!

It only took four months. And yes, I think the pictures look like slightly-fuzzy Glamour Shots. I should’ve crimped my hair, let my hands linger on my collarbone and slapped on some blue eye shadow. Next time!

In between training a client and teaching water fitness, I ate a quick lunch that I brought to the gym with me this morning.

Tuna salad

I wrapped tuna salad in a whole wheat tortilla and ate it with a side of two plums and sugar snap peas.

I added carrots, celery and tomato to the tuna salad to amp up the flavor and add a little texture. Delicious! 

Time to start brainstorming dinner ideas! I’m not in the mood to cook at all, so I’m thinking sandwiches for dinner may be on the menu this evening.

  • What is your favorite fall back "I’m too lazy to cook” dinner?

My favorites: Microwavable quesadilla (cheese + spinach + black beans), a simple sandwich or breakfast for dinner!

    I’m to lazy to cook for us turns into the Mexican place down the road! Which turns into chips, salsa, guac and too many drinks! We always keep Amy’s burrittos in the freezer – 1 min 30 in the microwave add some cheese, salsa and those great guac packets and dinner is done. They have gluten free for me too so it’s perfect standby.

    Need to make tuna salad soon, I always think about every time I make tuna salad, the tuna juice from the can squirts on my when I’m draining it. Boooo! My go-to dinner when I’m feeling lazy is going to a sub shop right down the road from me. They make their bread in house (and they have the option for wheat!), cut the meat for the sandwich after you order it, and use REAL avocado. Best. Subs. Ever.

    I always fall back to throwing things in a pot & making soup. Doesn’t matter if it’s hot or cold out, I just go with it. Or I call for chinese, my favorite!

    Definitely a breakfast for dinner kind of person when I don’t feel like cooking! Cook some eggs, pile in the veggies and top with cheese. Perfect! Congrats on getting on the wall!! I think you look great!

    I love doctoring up my tuna salad. Have you ever tried grapes in tuna salad? It’s one of my favorite additives–especially halved grapes 🙂

    I have been in a no-cook funk for a few weeks w/ the heat. Some of my lazy dinners…salads w/ some protein on top, chicken burgers or fish on the grill w/ veggies, & a new favorite…Veggie Hummus Wraps (Costco). Tonight we are having a simple cole slaw that I already prepped & chicken burgers :).

    I used to always just do a baked sweet potato or a couple pieces of avocado toast when I’d be too lazy to make dinner. Now that the boyfriend has moved in that kind of “meal” doesn’t really fly we go out to eat way too much. Can’t say I don’t enjoy it though!

    I tend to smear a toasted whole wheat bagel with peanut butter, and have an apple on the side. Or, if I’ve actually done what I intended to the Sunday night before, I will have salad vegetables already washed and cut up, so I will have a salad with crackers and maybe some chicken from the freezer.

    Depends on if I want hot or cold. Cold = green smoothie with a side of pb/j. Hot= eggs or breakfast food. Simple + quick!!

    Does going out for sushi count? Haha, too bad I love it way too much and often think, “hmm…I don’t feel like cooking.” However, Ezekiel bread with Muenster does make a pretty rockin’ grilled cheese!

    Salad is my fallback meal of choice 🙂 just stick some meat in the oven, chop up some veggies and/or fruits (preferably and!), and it’s a meal! Love Sadie’s face…and yours. 🙂 Congrats on making it onto the wall!

    My favorite lazy cooking recipes are always -chili (even though it’s kind of hot for it), simple salads, smoothies, soups, or a good ol’ almond butter and jelly sandwich.

    I love the picture…and how exciting for you! I truly love reading about your experiences in personal training as I keep trying to decide if I should take the plunge 🙂

    My fallback meal is rotisserie chicken. I buy it from the store, cut up some veggies and lettuce, and I have a nice, hearty salad! No cooking required!

    We usually make a big salad when we don’t feel like cooking. Throw in some pre-cooked chicken strips from Trader Joe’s and we’re set!

    Canned fish, veggies, crackers, etc…easy stuff..
    Microwave!
    I know a lot of people do the corn + beans + avocado + chicken thing, or a bunch of stuff.

    I always eat 2+ plums at the same time too. Major craving for red plums recently and bought some juicy ones — not organic, but cravings struck and truthfully I can’t afford organic all the time..just way too overwhelming.

    Why kind of wrap is that? And do you add mayo to the salad?

    Every night is an IM TOO LAZY TO COOK NIGHT – so I always just throw some fish in the broiler with spaghetti squash, works like a charm and hits the spot every time! 😉 If I don’t do this… I go to my favorite CHEAP sushi joint or Whole Foods!LOL!

    My I’m-too-lazy to cook dinner is either Chipotle (lol) or a sweet potato with vanilla greek yogurt, almond butter, and some granola on top. Totally hits the spot even on a hot day!

    And I really like the pictures on the left! So pretty, pretty! Don’t forget the big hoop earrings next time 😉

    I have to admit, I am a stir-fry lovin’ girl! It’s easy to simply throw any kids of ingredients you can think of which might combine well together (assorted veggies, even fruits) and any kind of sauce into a pan, and stir-fry away! Quick, easy, simple, and of course, nutritious!

    Summer snack plate! Cut-up fruit (whatever is ripe), cheese, nuts, crackers/bread, hummus.

    Our fall back usually ends up Costco pizza or publix hot wings or subs. If I didn’t have a husband to please it’d probably be eggs and mashed avocado on toast 🙂

    haha love the photo! This week my meal has been a hummus sandwich (with tomato, cucumber, and bell pepper on top) and baby carrots and sugar snap peas on the side. Too good. (Thought it’s only a go-to-throw-together when I have leftover hummus. I can’t stand to buy the prepared kind.

    Congrats on making it on the wall! My favorite meals when I don’t feel like cooking a lot are salads, tortillas with black beans,cheese and rice- which I almost always have cooked in the fridge or toast with a laughing cow and egg.

    I always go TO smoothies for something quick and for something I can take with me! I love cooking so I always try and make time but if I am in for a quick rushful day I rely on that smoothie just scoop, blend and pour into my to go cup. I always just rinse the blender and stick it in the dish washer for an easy clean up! I love sugar snap peas right now and have been adding them to my salad for a CRUNCH! Love + Shine CourtStar

    My quick dinner fallback is almost always brinner. Yogurt bowls or dippy eggs and toast are always good choices.

    Definitely breakfast for dinner. Eggs with veggies, cheese and toast!

    Soups are easy too. Just heat and add steamed veggies and shrimp. It’s like a hearty stew 🙂

    Lazy meals would have to be oatmeal, banana & pb sandwiches or even yogurt bowls with a side of veggies (all things I did for dinner in college quite often!).

    I love making what i call “healthy pizza”. I use a pre-made whole wheat crust, pre-cooked chicken slices (bought pre-made in the bag), pesto and 5 italian cheese mix. Slap it all on the crust and it take only 10 min!
