Meat Free is Fine By Me

When I was growing up, one of my very best friends would eat a lettuce and mayonnaise sandwich for lunch. Yep, that’s it. Just lettuce and mayo.

At the time I thought it was missing something. No meat? How is that a sandwich without some sliced turkey or ham?

Today I find myself loving veggie-only sandwiches. Adding cheese or hummus for some protein does the trick!

Today my sandwich was another meat-free creation.

Tomato

Goat Cheese

I toasted a Nature’s Own whole wheat sandwich round and topped it with a sliced juicy tomato and melted goat cheese.

On the side I had cauliflower which I roasted last night after tossing it in a bit of olive oil and sprinkling it with garlic salt.

I swear when I roast cauliflower this way it reminds me of popcorn. Call me crazy, but it does!

Lunch Time!

I also munched on a cool, crisp apple.

An Apple a Day...

I didn’t even miss the meat! 😀

    I think we were on the same wavelength today with the veggie-filled, meat free lunch! 🙂
    Growing up, I used to have a friend who would eat a miracle whip & cheese sandwich every single day!

    All of my sandwiches are meat-free, but when it comes to packing them to take to work/school, I tend to stick with plain almond butter or plain cheese. I ALWAYS get weird reactions when people find out that all that is on my sandwich is a couple of slices of swiss cheese but I enjoy it so much! 🙂

    My bff still eats tomatoes and salt as you would apples. Not me though!

    However, you’ve got me craving something with goat cheese for dinner! I’ll have to see what I can whip up!

    I can’t lie…I usually feel like if I don’t have some form of meat with lunch and dinner then I am missing something. I don’t need it at breakfast but I have to have it at lunch and dinner. Even if it is a meat substitute (like boca or morningstar) I still need that “meat” idea! haha!

    I love sliced tomato with goat cheese! Great combo. I go meat free without even thinking about it sometimes but I could never give it up completely.

    Since becoming a vegetarian, I’ve dealt with a lot of people asking where the meat is, but I don’t miss it at all! I love hummus in my sammies 🙂

    OK, I can do meat-free (lots of times I prefer it), but the thought of a lettuce and mayo sandwich made me nauseous. Ick. I have a thing with mayo (as in it makes me want to gag) but even if I liked it that’s a gross sandwich. Yours looks so, so good though!

    Even though I’m a meat eater, I definitely appreciate a good veggie sandwich…especially when there’s cheese involved! I do need a decent amount of fat & protein to stay full, so double cheese might be necessary 😉

    i was totally telling someone at work today that my favorite sandwich growing up with mayo with tomatoes on bread… they found it disgusting.

    Haha, lettuce and mayo. Here in mozambique, a lot of the locals love ketchup (well its really just runny tomato flavored sauce) and mayo sandwiches. that´s it. to make it even better, the one brand available is called Tangy Mayo. Really makes you hungry, right?

    Hey you are referencing my sandwich from grade school! It sounds a little nasty now! Do you know whenever I bring that sandwich up to my parents, they claim to have”forgotten” all memories of me having sandwiches like that? I’m glad you can attest to that! Anyways, funny!
