Moose Tracks Pie

Yesterday evening we arrived in St. Pete around 6:30 p.m.

I had just enough time to shower (much needed!) before we all sat down to a family dinner.

BBQ pulled pork sandwiches, homemade soup and roasted rosemary potatoes were enjoyed by all!

Dinner was excellent, but dessert was excellenter.

Yes, excellenter. It was worthy of a made up word.

That little beauty is called Moose Tracks pie and is made by crushing 1/2 package of Oreos for the crust, layering Moose Tracks ice cream on top and then topping it all with Cool Whip.

It is a winner! And I ate about a bazillion pieces.

We all sat around the table talking for a while before my dad and Ryan went off to bed and just my mom, sister and I remained. Gotta love hours and hours of late night girl talk!

Breakfast

This morning I awoke feeling not hungry at all. Weird.

Still, I knew I had to eat something, so I assembled a yogurt bowl with Oikos caramel Greek yogurt, multigrain Cheerious and fresh berries.

Eating a little something apparently revved my appetite, because I then ate a big spoonful of almond butter and some pretzel crisps with Nutella. I am always so snacky at my parents’ house!

Now it’s time to change into some workout gear.

My mom, sister and I are off to double header Jazzercise and Zumba classes! My mom is a big fan of both here in St. Pete and recruited us to join her in back-to-back classes. Should be a fun Saturday morning!

    Ohhh my gosh… that pie!! We made something similar when I was growing up out of Oreos called dirt pudding. It was SO good.

    That pie sounds incredible! Imagine the variations you could do with other types of ice cream! If I were you I’d have skipped the yogurt and eaten more pie for breakfast 🙂

    Anything with Oreos MUST be excellent! If I’m not hungry around meal time I always find eating something small revs up my appetite. Its like my stomach falls asleep/get lazy so I give it a little nudge 🙂

    It’s great you can go to the gym with your mom, funny and it’s great to spend time with your family. Don’t worry, I’m always snacky and even more at my parents’! But it’s because you feel well when you are with them.

    The pie sounds so easy to make! I’m having a girl’s night this evening and I’m going to serve moose track pie. Thanks for the brilliant idea!

    Also, good luck with the move and try not to be too stressed. Last year I moved from Toronto to Vancouver and I just wanted everything to be in order right away. Now I realize that I should have just slowed down and taken a breath because everything has a way of falling in to place.

      it’s basically like a throw back aerobics class. dancing and jumping around and basically looking totally uncool. it’s a blast!

    I’m also very snacky when I visit my Mom too! I think it’s some sort of comfort eating maybe : )

    I always check all her cabinets regardless if i’m hungry or not.

    Yay for Jazzercise! My mom still loves taking those classes and back in the day, about 10 years ago, that was the first ever group exercise class I ever took. Its a great workout! Have fun 🙂

    That pie looks awesome!! Side question: Have you ever been to The Columbia restaurant? I think there’s a location in St.Pete’s otherwise there are other locations in Florida. The restaurant is over 100 years old and the food is Spanish inspired. I highly suggest it!!!

    I always snack at my mom’s too! I go over just to let the dog out and I always end up skimming through her cupboards looking for a snack…I don’t know why!

    I totally feel you one the sneaking food at the parents house…I had to come home this weekend to visit my parents, and have officially ate a 1/2 a gallon of their own homemade butter pecan icecream and a tub of their cottage cheese (they will be slightly disappointed when they go the freezer for ice cream, and upset tomorrow afternoon when they want cottage cheese for typical Summer sunday after church lunch of grilled burgers, baked beans, and cottage cheese….weird how home makes you feel more comfortable and long for the food that brings you back to your childhood
