Moroccan Vegetable Stew

Remember that Taste of Ocala meeting I said I had on my agenda for this afternoon? Well, it was rescheduled. And by rescheduled I mean I put it on my Google calendar for the wrong day. Womp, womp.

My meeting is actually tomorrow and I didn’t realize my mistake until I showed up at the restaurant where our lunch meeting was supposed to take place and no one was there. Oops!

Lunch

Since the Taste of Ocala meeting I had on my calendar for lunchtime today was no longer going to take the two hours I allotted, I headed home to eat lunch with Sadie before it was time to go back to work.

Since I had extra time, I decided to make a Blue Apron meal for lunch!

Moroccan Vegetable Stew Blue Apron

I followed the directions for the Moroccan Vegetable Stew and used the ingredients that were sent to us a little more than a week ago, figuring Ryan could reheat his portion for dinner since I’ll be working into the evening. The zucchini was the only thing that didn’t last, but other than that, everything else was just fine and the end result was delicious!

I attribute the fantastic flavor to the ras el hanout, a spice mix from North Africa. So delicious!

    I have been obsessed with soups and stews this winter. This one is a must try! The last stew my husband and I made was a chicken, lentil, sweet potato, curry stew. I’m a big fan of curry flavors!

    Yum! Those Blue Apron Meals look so good. I’m having Chili for lunch – love having soups and stews in the winter! I also finally made Sangria for the fist time after I keep seeing it looking so tasty on your blog 🙂 – I tweaked it a little and posted the recipe, it was awesome!

    I have been debating ordering blue Apron for a while.. .that meal looks good! Do you think its worth the price tag? And I was looking and found it strange they only deliver on Thursdays/Fridays when I really would want my meals Monday – Wednesday. Is it the same for you? How do you find that?

    There’s a great mushroom and barley soup from Sarah at Making Thyme for Health which is my all time favourite soup it is so so good!

    That stew looked and sounded fantastic.

    One of my favorite recipes is Moroccan Spice Roasted Chicken. The spices are so warm and a little kicky, I love it!

    braised chicken thighs with toasted almond and raisins! (it was a stew) It was so savory and delicious with both cinnamon and turmeric in it. Oh and sweet potato. Can’t go wrong with sweet potato.

    I made a chicken vegetable chili the other day that turned out even better than I had hoped. It was a cross between a chili and a soup because of all of the vegetables.

    The look of this dish reminds me a little bit of your mock risotto which I had one of my nutrition clients try recently… she has mentioned how much she loved it about five times! I keep seeing Blue Apron boxes in my building lobby being delivered for neighbors.. I am starting to think I may have to try it.

    You’ve convinced me yet again to try something! I tried Stitchfix because of you and now Blue Apron. I loved my first two fixes and now am waiting for spring/summer clothes to schedule another. Excited to try the recipes from Blue Apron!
