Not Any Old Salad

Lunch today may look like any old salad…

Friday Salad

But the bed of greens is actually comprised of shredded Brussels sprouts!

After dinner last night, I placed the leftover steamed Brussels sprouts in the food processor and pulsed them a couple of times to make Brussels sprouts shreds to use as a base for my lunchtime salad.

I like the steamed Brussels sprouts much better this way!

Trout Topped Salad

This lunch reminded me of the roasted Brussels sprouts salad I had back in November, though I actually liked this one more. I think that the raspberry-glazed trout and shredded mozzarella cheese I included in the salad added a lot of flavor. I also threw some Craisins in there as well for a little extra sweetness!

I was still a bit hungry after lunch and stumbled upon some cheese danishes in the breakroom. I am a sucker for cheese danishes and nabbed one to enjoy back at my desk.

I fear that the little danish triggered a monster in me because now I want more sweets! At least I will be celebrating my friend Kaitlyn’s birthday tonight and birthdays always include somethin’ sweet.

    I love brussels sprouts! I totally want to try shredding them in a food processor! I bet they would taste amazing. All I need is the food processor. 🙂 One day!

    the recipes page looks great!! i love all the photos!! and SHREDDED sprouts is GENIUS!! i;m definitely doing that.. esp since i have a GIANT TUB of them in the fridge!

    Love the new recipe page! Totally know what u mean on one bite of dessert leading to a sugar craving, I had a sliver of a donut in the office kitchen this morning & it’s led to serious hunkering for anything sugary all morning.

    I had Brussels sprouts in my salad today too! Not the shredded kind, but that’s a really good idea. I’ve been eating them like crazy lately – probably to make up for all the years of my childhood that my Brussels sprout-hating parents didn’t serve them to me! Have a great afternoon Julie! 🙂

    Hi, this is BRILLIANT!!!!!!!! I am so using this! I am obsessed with bsprouts. I plan meals around them. Meaning i start with the sprouts and figure out what to have as a “side dish”….

    I have been meaning to do this brussel sprout salad idea for a long time. I have two bags of bsprouts waiting to go. I wonder if roasting them then shredding them would work?

    MMM brussel sprouts are one of my favorite vegetables EVER! love them roasted and a little on the *charred* side (yes, i know i am weird…)

    I really like using Brussels sprouts this way. Trader Joe’s sells a great packaged salad that uses sprouts like this – they add in some dried cranberries, bacon and grated/fresh parmesan cheese. It’s really good!

    My entire life I thought I hated brussel sprouts (I guess because as a kid all my friends would say ewww when they were mentioned). I tried them a few months back and REALLY enjoyed them. They are actually yummy! I will be using your shredding trick soon. Thanks!

    Here in Texas I have been snowed in for 4 LONG days!! Thought about you today though, I broke open a jar of PB and ate about half of it in PB fingers!!?? So bad, but so good!! Back on track tomorrow!!
