Oatmeal Banana Flax Muffins

This afternoon I felt inspired to get a jump start on dinner. Okay, fine. I knew I’d probably feel lazy later this evening and better get crackin’ earlier rather than later if I wanted a quality dinner. At least I know how I operate!

I had two large chicken breasts in the fridge that I figured I could parlay into a yummy crock pot meal.

A comment on Courtney’s blog by Corey linked to a recipe on her blog for slow cooker spicy buffalo chicken sandwiches and I was immediately sold.

Though I am a big fan of my own pulled buffalo chicken sandwiches, I wanted to try something new and Corey’s recipe seemed like a winner.

Her recipe called for sautéing veggies and chicken in a skillet before putting them in the crock pot, but I detest dishes, so I put everything in the crock pot at once. (I omitted the red pepper because I didn’t have one on hand.)

After cooking for about five hours on low, we had spicy buffalo chicken, ready for eatin’!

It was really good! Ryan and I both liked it and agreed we would definitely make it again, though I must say that if I was really in the mood for traditional buffalo chicken flavor like I imagine it (think buffalo wings!), I’d stick to my pulled buffalo chicken.

We served our chicken over steamed broccoli with a side of muffins!

The muffins we ate were homemade oatmeal banana flax muffins that I made yesterday as part of my latest freelance assignment. Packed with whole grains, oats, healthy fat and banana, they are moist, wholesome and totally delicious.

Oatmeal Banana Flax Muffins (Makes 6 muffins)

Ingredients:

  • ¾ c. whole wheat flour
  • ½ c. old fashioned oats
  • ¼ c. firmly packed brown sugar
  • 2 tbsp. ground flax seeds
  • 1 tsp. cinnamon
  • ½ tsp. baking soda
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 egg white
  • 2 ½ tbsp. canola oil
  • ¼ tsp. vanilla extract
  • 1 small banana, mashed
  • ½ c. milk

Directions:

  • Preheat oven to 350 degrees and line muffin pan with six paper muffin cups
  • Combine whole wheat flour, oats, brown sugar, flax seeds, cinnamon, baking soda, baking powder and salt
  • In a separate bowl, mix together egg white, oil, vanilla, banana and milk
  • Gradually mix flour mixture into egg mixture until batter is combined
  • Divide the batter into the six muffin cups
  • Bake for 15 – 18 minutes

I think they’d make a great breakfast on the go.

    Heck yes, I have all the ingredients! Although I’m out of muffin cups, and I hate baking muffins w/o them (the pan is terrible to clean!). Will be making these soon! 🙂

    My hubbs would be SO on board with buffalo chicken anything as long as they tasted like the wings 🙂 Muffins look good too! Will have to give those a try. Love your recipes!!

      I have a great recipe for vegan muffins Katelyn, I make them all the time and give my neighbor a batch every time I make them too!

      2 ripe bananas, mashed
      1.5 c water
      .5 c sugar
      2 cup whole wheat flour
      1 cup oats
      2 tsp baking powder
      .5 c coconut
      1 tbsp cinammon

      Combine, bake at 350 degrees for about 18 minutes. I will warn you though, they go moldy in about 1 week, so freeze what you wont eat right away!

    Old bananas were staring at me today. I had an oatmeal banana loaf recipe I spotted on another blog and since I have a lot of bananas, I might be able to make these too + coconut flakes because I love the texture of coconut flakes in muffins.

    Those muffins sound ridiculously close to a recipe I used to have for healthy banana muffins with this nut streusal on top. Unfortunately, I lost it. I’d give my left arm for that recipe!

    I make simliar muffins to these at home! they always turn out fabfabfab. I add walnuts to mine though and maple syrup 🙂

    I have a lovely banana bread recipe similar to these muffins:

    1 1/4 cups whole grain flour + sprinkle of baking yeast
    1 cup raw sugar
    1/2 cup cream cheese or vegan substitute
    1/4 cup protein powder of choice
    1 tbsp baking powder
    1 tbsp cinnamon
    salt + vanilla to taste
    3 mushed bananas

    Warm the cream cheese and stir in the dry ingredients. Stir in eggs, then mix in the mashed bananas (lumps are okay). 350 for 60-70 minutes.

    The cream cheese makes banana bread extra moist- that’s the Hawaiian secret! 🙂

    I wish I had one of those muffins for breakfast tomorrow! I made muffins today too, but I’m almost considering them cupcakes b/c they’re a litte decadent 😉 More like a dessert than breakfast.

    Looks like a yummy recipe! I love baking with flax – I use it an egg replacer when I’m on a vegan kick and sprinkle it over pretty much everything for some omegas! 🙂

    I love freezing muffins! It makes it so easy to have a healthy breakfast when in a rush! This is why I hate when people say they don’t have time to eat healthy–they just haven’t figured out how to do it!

    I just made the BEST muffins from HEABs website! Almond butter banana nut muffins. Ohhh boy they were unreal… these look kind of similar 🙂 LOVE muffins

    yum, yum, yummy!!!!! i am dying to make muffins! Do you think almond milk would work in place of regular milk? How about whole wheat pastry flour instead of just plain whole wheat flour? I’m not sure if there’s a difference, but just checking!!! I can’t wait to try these out!!! 😀

    I make a banana loaf which is almost the same recipe except I think it involves some flaxseed and applesauce action instead of the canola oil! It’s so delicious but i won’t lie, everything tastes better miniature (ie in muffin form)

    Has anyone got any suggestions for an alternative to canola oil? It’s not available in Ireland (unless it’s called something else that I’m not aware of)
