Quinoa Kick

One good thing about rainy afternoons in Florida is that they often mean slightly cooler evenings.

Perfect for pre-dinner walks with Sadie!

Dinner

I am on a bit of a quinoa kick.

It’s nutritious, tasty and incredibly easy to prepare.

On Sunday evening the past two weeks, I cooked up a big batch of quinoa to have on hand throughout the week and find that it makes dinner prep super easy! (Quinoa, berries and peanut butter is also one of my favorite healthy snacks these days. Don’t knock it ‘til you try it!)

For lunch today, I prepared a big batch of cheesy quinoa chicken that Ryan and I ate again for dinner. I took all the meat off of a rotisserie chicken that I bought on sale at the grocery sore yesterday and stirred it into a large, reheated bowl of quinoa, adding roasted green beans, sautéed Portobello mushrooms and shredded mozzarella cheese.

It came together in a flash and was an incredibly satisfying and savory dish.

Next up in my quinoa adventures is making this peanut butter quinoa granola. It must be done!

Any other quinoa recipes out there I need to try? I’d like to keep my quinoa kick kickin’! Smile

    Thats funny that you mention a quinoa kick! The last few weeks I have been on such a quinoa kick as well. I also have been cooking up big batches and re-heating for breakfast/snacks with my favorite being topped with nut butter/fruit. Recently I topped it with some nutritional yeast and it was really tasty :).

    Julie, have you tried Quinoa flakes? They are comparable to oats. I just had them this morning, and they are delicious. I prepare them with almond milk, and add peanut butter and banana. I also just tried a recipe from Jessica at How Sweet Eats, with quinoa, watermelon, feta, basil, and lime. OMG its unreal!

    Quinoa tabbouleh is always a summer salad standby. Also, I use quinoa for breakfast by cooking it in almond milk and adding sliced banana and walnuts. So good when I need a change from oatmeal.

    There’s an amazing place in Chicago called Protein Bar that uses quinoa as the base for almost all their items. Their website is a great place to pull recipe ideas to recreate at home…proteinbarchicago.com.

    I have made Quinoa and tukey meat stuffed peppers – it was AMAZING google it im sure you can find a receipe. I put tomatoes and red pepper in ti too

    I love Sadie’s stick straight tail waggin! So cute. Our little Muffin doggy wags her tail in circles when she gets excited – literally spins her tail off. It never gets old

    I’ve been wanting to make big batches of quinoa on Sundays to have for lunch/dinner throughout the week, but I was never sure of how to store it! Do you just cook it all up and then refrigerate it and then heat up portions as you want them?

    I love quinoa. My favorite way to fix it is a Waldorf Salad quinoa with a cinnamon yogurt sauce. Outstanding! I’d be willing to share the recipe if you’d like to try it.

    Anyway I’m obsessed with quinoa too; I actually made whole wheat banana quinoa pancakes with it. They are super good topped with peanut butter. I thought I would share. 🙂

    As a vegetarian, quinoa is a staple in my diet- I eat it almost every day. A few recipes I’ve really enjoyed are:

    Whole Foods’ Quinoa Tabbuleh (using quinoa instead of bulgar wheat)

    Epicurious’ Almond cranberry quinoa cookies

    and Quinoa mac and cheese! For a fun variety, I add some truffled cheese from Trader Joe’s!

    holy mackeral I need to try this recipe, it looks and sounds so good! Usually not a big quinoa fan but this one could transform me. Also, I’m embarrassed to admit that I’m on my last month of your posts before I’ve completely stalked your entire blog. I’m easily going to mourn the day when I have to solely rely on your daily updates.
