I arrived home today to one of my favorite things in the entire world: packages!

One of my packages was a big ol’ box from POM Wonderful.

I’m a lucky lil’ blogger! Though I am excited to enjoy several bottles of this 100% pure pomegranate juice, I think Ryan was even more excited. He’s been quite the POM fan for several years.

The bottle shape is quite funky and inspired Ryan to do some POM presses and POM curls.

Clearly our entire family had a little extra energy today, so we leashed Sadie up for a romp at the dog park.

 I took what may be one of my top five favorite pictures of Sadie as she was spitting out leaves and dirt. Her jowls got all caught up in her mouth and she looked like such a goof.

Dinner

Tonight’s dinner was another simply delicious simple meal!

Chicken prepared in the ol’ crocker with BBQ sauce and roasted veggies on the side. Mmm, mmm good!

Reader’s Recipes!!!

I think one day you guys are gonna find me and throw all the meals I make week after week in my face. I hope you’re not too sick of them(!!!)… Buuut, just in case you are…

I’d like to reach out to all of you for your help! I’m going to try out a new READER’S RECIPE each week in March.

I’ll make a recipe based on a recipe submitted by one of you, or I’ll create a new recipe using key ingredients you guys suggest. Fun, huh?

Please comment on this post with a recipe (or a link to a recipe) you think I should try. If you don’t have a specific recipe in mind, simply comment with a key ingredient you think I should incorporate into a meal.

Feel free to submit recipes for any meal (breakfast, lunch or dinner) and baked goods as well! I don’t discriminate.

(Please do not suggest catfish or any catfish-based recipe because I can 100 percent guarantee your suggestion will not be selected… I have my reasons. 🙂 )

Woohoo! I’m already excited to try out some new delicious dishes!!!

I’ll select a recipe to try tomorrow and then after I make the recipe and post about it, you can comment with more recipes for me to select from for the next round. Sound good?

    I would say you should try a meal with macadamia nutbutter! It is so good and I have it every day in a big salad.

    Salad (sweet baby lettuce and spinach)
    chicken ~3 oz (cold)
    broccoli stalks cut up ~ 2 servings +
    Roasted yellow and orange peppers (425 degrees for 40 min no oil) serve cut up cold in salad
    1 1/2 tbsp of macadamia nutbutter or more (Maranatha’s is the best)
    garlic powder lots!
    salt and italian seasons

    Cut up all really good together and eat up!

      i use mainly fresh veggies at dinner… i buy whatever veggies are on sale that week. the artichokes in this dinner were frozen though (not as good as canned, in my opinion!).

    I made this Spicy Shrimp for dinner tonight and it is a big hit.
    Skip the grits and make a side of quinoa with mushrooms or just chow with a side of steamed brussel sprouts like I did.

    zucchini lasagna! I made this for friends a few weeks ago and it was a hit

    Ingredients:

    whole wheat lasagna
    2 small zucchinis, diced
    1 small onion, diced
    1 cup mushrooms, diced
    2 cloves garlic, minced
    1/2 cup ricotta cheese
    1/2 cup mozzarella cheese
    2 jars store bought pasta sauce (whatever you prefer)
    1 tsp. basil
    1 tsp. parsley
    1 tsp. oregano

    Directions:

    1. Boil lasagna noodles, set aside
    2. Combine cheeses in a large mixing bowl.
    3. Saute onions, zucchini, garlic and mushrooms and spices over medium heat for approx 10 minutes. Add pasta sauce and simmer veggie mixture for 10 minutes.
    4. On the bottom of a greased baking dish, spread a thin layer of the pasta sauce mixture.
    Next, layer the lasagna, then cheese, then sauce. Keep layering until ingredients are almost gone. The top should be noodles with a thin layer of sauce and cheese.
    5.Cover with aluminum foil and bake at 375 for 50 minutes.

    I think it’s a great idea. I always alter recipes (I somehow struggle following exact directions) and they always turn out different. 🙂
    I’ll go along with the key ingredients because that’s how I cook most of the time. So… my key ingredients will be: chicken, ginger and coconut milk. Fun, right? 🙂

    Chicken Salsa Soup:

    2 Cups water
    6 OZ Chicken–> Chopped into small pieces
    1 Cup low sodium chicken broth
    1/2 cup cooked brown rice
    1 Cup fresh salsa
    1 TSP Olive Oil
    Salt/Pepper
    Minced Garlic

    Add all ingredients into a pot and place on medium heat for 30 minutes. Reduce the heat and add the garlic and simmer on low for an additional 15 minutes!
    ENJOY!!! sooooo TASTY

    Hi! I noticed you like spaghetti squash so I figured you might like this Spaghetti Squash Dip I tried a few weeks ago. It taste pretty indulgent but is still pretty low cal. I ate it with flax seed chips or pita chips! Also, you can make a half portion and use the rest of the squash like you normally would.. it’s amazing how much one squash yields! Oh and I added in some garlic 🙂

    Ingredients
    1 spaghetti squash, halved and seeded
    1/4 cup butter 1
    /2 cup mayonnaise
    1 cup grated Parmesan cheese
    2 cups grated Monterey Jack cheese
    3 tablespoons grated Parmesan cheese for topping
    Directions
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
    Place the spaghetti squash cut side down on a lightly greased baking sheet. Place in preheated oven, and bake until soft when a fork is inserted., 30 to 40 minutes.
    Scoop out the cooked squash, and place in a mixing bowl. Add butter to the squash and stir until butter melts. Stir the mayonnaise, 1 cup Parmesan cheese, and Monterey Jack cheese into the squash mixture until well blended. Pour into the prepared baking dish. Sprinkle with 3 tablespoons Parmesan cheese.
    Bake in preheated oven until cheese melts, about 20 minutes.

    Homemade Protein Bar:

    1 T natural peanut butter
    1 scoop of your favorite protein (I don’t suggest strawberry)
    1/4 C oats
    1 packet Splenda (optional)
    1/2 t water

    If you’re using a natural PB at room temp, you don’t need to microwave your PB. Otherwise, micro your PB in a glass bowl until extra soft.

    Add the rest of the ingredients, water last. Stir for a while (you’ll think it won’t work!) until it’s the consistency you want (dryer works better). You might need to add a little more water or start out with less.

    Spoon the mixture onto Saran wrap, using the wrap to shape your bar. You can eat it as is, or keep in the fridge for a later time!!

    (I like to eat it straight of of the bowl with a little extra water sometimes. YUM!)

        Yep. Just one bar. Of course, you can make 2 at a time but it’s hard to stir…

    Salsa Chicken and Black Bean Soup! It’s super easy to make, and it is soooo delish. It’s a crockpot recipe too, so you can have it be ready for you when you get home from work. 😀

    This meatloaf is a definite go-to recipe in our house. If you don’t like ground turkey you could really use beef or even ground chicken. The hubbie loves it! Even if it is healthy for him 🙂

    Just an FYI, Pom Juice is supposed to increase fertility!

    Blackberry Ice Cream Recipe

    6 cups Half n Half
    4 cups Heavy Whipping Cream
    1 ½ cups Splenda
    6 medium to large egg yolks
    1/3 tsp. salt
    2 tbsp. Vanilla Extract (or use grated fresh)
    About 2 pounds fresh Blackberries

    Mix first five ingredients, heat to a gentle boil, chill, add Vanilla Extract, mix for about 30 min, add Blueberries and mix until done.

    Per serving:
    Calories 201. Total Fat 18.7g, Total Carbohydrates 6g, Fibre 1 g

    I have another good salad idea! I am actually going to make this tonight.

    Bison burger (I get mine at WF)
    salad (sweetbaby let and spinach)
    feta cheese (full fat is the best) I use 1 oz
    blackberries ( 80 gms)
    broccoli stalks ( I like raw)
    broccoli flowerets (I like these roasted)
    red wine vinegar for the dressing (2 oz or so)

    I heat up the burger (if pre-cooked) and cut into small peices while hot and cut up in the salad, so everything mixes really well, the feta doesn’t break up completely leaving it warm and melding with the blackberries.

    the flavor combo is amazing! Sounds odd but it is so good!
