Reese's Triumphs All

April 8, 2010 by Julie 20 Comments

First of all, I want to say thank you to all of you who commented on my last post about all-inclusive vacations. You definitely gave me some things to think about and I appreciate all the recommendations as well! I’ve already visited a handful of websites from the places you mentioned and I wanna go on a tropical vacation NOW. 😉 Waiting more than six months is no fun!

Dinner

Dinner tonight was super simple. When I eat a big salad, I usually eat one for lunch. I prefer hot, more indulgent-tasting dinners for the most part. Buuuut, tonight I changed it up a bit and had a big salad for dinner.

Beef Tenderloin Salad

My salad included:

  • Beef tenderloin
  • Spinach
  • Arugula
  • Carrots
  • Sugar snap peas
  • Cucumber
  • Olive oil + balsamic vinegar

Dinner

The salad was good, but I’m not gonna lie… Dessert was much better. ;)For Easter Ryan gave me the biggest Reese’s egg I’ve ever seen.

Giant Reese's Egg

Since dinner was on the lighter side, I had my fair share of this bad boy…

Ohhhh Yum

Chocolate + Peanut Butter = Heaven

Anyone else pumped that tomorrow is Friiiiday!?

I'd love to connect with you! I am always so grateful when you let me know you tried one of my recipes or workouts and tag me in your photos or updates. Thank you so much!!!

Giant is not an understatement. There is no such thing as a replacement for Reeses

I LOVE salads for dinner…I load mine with lots of nutritious veggies and protein. 🙂

I really want to start using olive oil & balsamic vinegar on my salads and was wondering how you make the dressing. Do you measure it out and add herbs, spices, etc.??

i actually just shake up a mix of the two! i don’t have it down to an art, but usually use a decent amt. of vinegar since i love it!

Reeses eggs are the only candy I go nuts over. There’s something about them that makes them different from regular Reeses. Glad you enjoyed yours!

My mom gave me one of the giant reese’s eggs last year. I was a very good girl and managed to split it into the number of servings the box said and actually ate them one at a time. I don’t think I would have been able to do that this year. I had much less control around food this year.

The salad looks great, but I’m with you, hot dinners are better. The egg is huge! I would have ate a big chuck too! have a great weekend.
