Salmon with Raspberry Glaze

Over the weekend my mom told me about a delicious dinner she made that my dad said tasted like a meal from a restaurant. She said she followed a recipe she received from Publix.

If you’re not from the southeast, Publix grocery stores produce simple recipes published on note cards called Publix Apron’s Simple Meals. They often place the cards by samples of the meal featured on the card.

Yesterday at the grocery store, Ryan and I tried a sample of Publix Apron’s salmon with raspberry glaze, the very meal my mom and dad raved about.

It was incredible and we immediately purchased the necessary ingredients to recreate it at home this evening.

While Ryan prepared the green beans we planned to serve with the fish, I cooked the salmon and made the raspberry glaze. raspberry salmon 015raspberry salmon 011My mom and dad were right. This salmon is fantastic and definitely tastes like something you would order in a restaurant. raspberry salmon 010Served with roasted green beans (that we didn’t burn), this meal was a winner! raspberry salmon 013Salmon with Raspberry Glaze (recipe from Publix Apron’s)

Serves 2

Ingredients:

  • 3/4 lb. salmon filet
  • Pepper, to taste
  • 1 tbsp. raspberry preserves
  • 1 tbsp. white vinegar

Directions:

Spray a pan with cooking spray and heat to a medium heat. Wash salmon filet and place in warmed pan, topping with pepper before spraying with cooking spray. Top pan with a lid and let cook on medium heat for approximately seven minutes, until sides become light pink.

Flip salmon and let cook another five minutes until fish flakes with a fork and is no longer raw in the middle. Top with raspberry glaze and enjoy.

    Salmon is the type of fish that just BEGS for a glaze. It can become a bit dry in a hurry without a glaze (or if you accidentally forget about it in the oven…which i have done a million times).

    The raspberry flavor probably goes wonderfully with the fish! YUM!

    I make a glaze with orange juice, EVOO, ginger and other stuff. I need to try raspberry now 🙂

    I love Apron Meals at Publix and saw this recipe but was a little wary of trying to cook salmon=/ The other day they had a great garlic bread hummus concoction and I picked ip the ingredients but forgot the recipe so I’ll have to see if they list them online!

    Made this for dinner tonight…the cooking technique for the salmon is awesome. I usually don’t cook it on the stove top…it was so moist it was melting in our mouths! PBF recipes are fail proof!!
