Spring Produce

I am a girl who plans her weekly meals based on what fruits and veggies are on sale at the grocery store every Sunday. This means that when the seasons change and different produce becomes in season (and therefore on sale) my purchases change as well.

Oh So Fresh!

The warmer weather in Central Florida got me thinking about spring. With the first day of spring rapidly approaching (it’s Saturday, March 20, by the way), I’m anxiously awaiting fresh spring produce!

Of the following spring produce, which are you most excited to enjoy?

  • Apricots
  • Asparagus
  • Spinach
  • Avocado
  • Vidalia Onions
  • Radishes
  • Strawberries

(Is anyone going to pick radishes? I mean really… 😉 )

I am definitely most excited for strawberries!

Lunch

Lunch today featured fresh veggies and pasta… Shocking, I know. I never eat this meal. 😉

Lunch Time!

Today’s noodle bowl included:

  • Carba Nada egg fettuccine pasta
  • Classico four cheese pasta sauce (My new obsession!)
  • Steamed broccoli
  • Sautéed portobello mushrooms
  • Parmesan cheese

Stirred Up

Is it weird that I really think I could eat this every single day for lunch? I am a big advocate for variety, but this is one meal I get really excited to eat every single time.

For dessert I enjoyed a cup of sugar-free Jello and a mini apple pie Larabar that I received yesterday in my race packet for Saturday’s 10k race. Gotta love free samples!

    Avocado! Mainly because here in Pittsburgh they can run 3-5$ a pop when they aren’t in season. When they are, they tend to be more like $1-2.

    I actually just did this poll on fitsugar.com earlier today! I am a big fan of strawberries, especially organic ones (I read that conventional strawberries often have red dye injected into them…iiick!). One of my favorite snacks is mixing fresh strawberries into Greek or vanilla yogurt and adding whole almonds. Yumm!

    Asparagus and Radishes are my favorite and I am looking forward to enjoying them soon. Granted… they will not be local since we have MONTHS before the nice weather come back.

    Strawberries all the way! I’m excited to go pick them with my mom, and then spend all day in the kitchen making her homemade strawberry jam:)

    I love love apricots. My parents have a huge tree and my mom makes dried apricots, apricot jam and apricot nectar each year. I always beg for some of it…

    I love fresh produce. Keith and I actually have a garden and we grow summer squash, zucchini, strawberries, broccoli, spinach, tomatoes, radishes, and bell peppers. It is SO fun!! 🙂

    I actually love asparagus so I’m excited for that but something about strawberries just screams spring/summer! That and a cold glass of chard but that’s another story 😉

    Loving asparagus and spinash but now that I think of it I love spinash salad with stawberries….Yum!
