Throw Together Black Bean Salad

As I was chatting about weekend plans with one of the women in my TRX class today, I realized that tomorrow is Friday and I get to see three of my best friends in the entire world tomorrow evening! (We’ve been best friends since elementary school.)

Carrie, Michaela and Leah all arrive in Tampa late tomorrow night and after I pick them up at the airport, we’ll be off to Sarasota/Siesta Key for our girls’ weekend. I am so ready for some beach time and fun in the sun!

Hurry up, Friday!

Knowing that I get to see three of my favorite people in the whole world tomorrow has me in one heck of a good mood today! I also had a shorter-than-usual day at work, so the rest of my afternoon is free with the exception of blog work. I’m hoping to break away from the computer a little early this evening and take Sadie on an extra long walk. It’s gorgeous outside today and since I know the horrific heat of summer in Florida is only a few weeks away, I want to take advantage of evening walks that don’t leave me dripping in sweat while I can. 

Work + Lunch

Work went well today! Teachin’ and trainin’!

On my way home, I swung by a jewelry repair shop to get one watch fixed and another one fitted. (I just bought this watch on super sale for $57 on RueLaLa a few weeks ago. I’ve been admiring a similar one that my sister has for years!) I thought I would be at the jewelry shop for a while but I was in and out within 15 minutes. Sweet!

Lunch occurred the minute I walked through the door.

On the menu for today was a throw-together black bean salad roughly modeled after my edamame and black bean salad.

I layered the following in a large bowl:

  • 1 can sweet corn
  • 1 can black beans
  • 1 avocado
  • 1 tomato
  • Garlic salt
  • Cumin

Stir everything together and dig in!

    Oooh that sounds like such a fun weekend! I am so excited for 70 on Saturday in Wisconsin. I could use some Florida sun too though 🙂

    Oh my gosh. JULIE! I came to your Blog to look back at the shoes you wore to your Wedding — I want to buy them! They’re adorable. Where did you get them? The crazy thing is… The dresses in this photo are the same dresses my bridesmaids will be wearing 🙂 I think it’s a sign… I should get the shoes! 😉

    I need to start making quick lunches like this! I teach too and sometimes it’s hard when you’ve been going all day to sit down and eat something that’s quick and good for you too!

    My coworkers and I took a 1.5 hour lunch break to go outside because it’s in the 50s today in Chicago and the entire city is rejoicing. We were over-ambitious and tried to get outdoor seating. Still a little too cold for that. Haha, it must be so different from Florida.
