Vanilla Pumpkin Overnight Oats

The anticipation of a good breakfast makes getting up in the morning a bit easier for me.

Last night I prepped my morning meal: overnight oats with lots o’ pumpkin!

The thick ‘n’ creamy mixture included:

  • One packet of Kashi GoLean creamy truly vanilla hot cereal
  • 1/3 c. pumpkin
  • 1/4 c. cottage cheese
  • 1 Oikos 0% Greek yogurt

I stirred it up and let it chill in the fridge overnight. This morning I dug in and loved every bite of this sweet and thick concoction.

What’s your favorite make-ahead meal?

As I said last night, my favorite make-ahead meal is definitely something in the crock pot. There’s nothing like coming home to an apartment filled with the smell of a delicious dinner.

Morning Work Out

Ryan is transitioning into morning workouts. Usually I work out in the morning, and he goes into work early and hits the gym after work… so by the time I’m off work he’s done working out. Lately though, he said he wasn’t in the mood to go to the gym after a full day at work. I don’t blame him and can’t remember how on earth I would workout after work when I first graduated from college. Ick.

Do you prefer a morning, lunchtime or evening workout?

I definitely prefer getting my workout done first thing in the morning. It feels good to check it off my list and accomplish something right off the bat!

Waking up at 5:30 a.m. seemed insane to me before, but like anything else, after a week or two of dedication it became habit.

After his first morning workout yesterday Ryan said he was in a good mood all day and was happy to be able to relax after work rather than rush to the gym. I’m sure Sadie likes the extra time with her daddy too! 😀

This morning I did 50 minutes of cardio:

  • 10 min. stair master
  • 10 min. arc trainer
  • 20 min. elliptical
  • 5 min. run
  • 5 min. incline walking

I really enjoy breaking up my cardio into shorter segments on various machines. It really prevents boredom and makes the workout fly by!

    Were the oats really cold? I just can’t do overnight oats because they get SO COLD in my fridge. I feel like I’d have to let them sit out for an hour.

      yeah they were definitely cold… but i like it like that. i actually don’t mind uncooked oats by themselves. i’m weird like that.

    I really want to be a morning work-out person. I think in the spring it will be easier b/c I can run outside and won’t have to do the whole shower at the gym thing, which is annoying. Breakfast looks yummy – I’m not sure I could eat it cold though.

    I am definitely a morning exercise person. I lose all motivation to work out after a long day at work. I need an early morning sweat-session to get the day going.

    I definitely prefer morning workouts. I used to workout after work and wouldn’t get home til 8 pm every night..when I would actually go, that is. Now, I work out in the morning..that way, I have no excuses and can always fit it in!

    Evening workout for sure. I already get up at 5 just for work so there’s no way I could get up any earlier. Plus i like to shower at night so it makes sense to workout after dinner then hop into the shower.

    I am a morning workout person…all the way! It is the first thing I do everyday and it just makes me feel good and gives me energy all day long!

    great overnight oats!! & i used dto lOVE getting my workouts done in the morning but i realize that my best workouts happen in the afternoon

    I really prefer running in the morning, so that I know my workout is done for the day and also so I don’t have to shower again! As for make-ahead-meals, we make big pots of things, like sauce, soup, chili, etc. and freeze them in smaller containers. I love knowing that dinner is just a microwave thaw away.

    I prefer to go in the mornings but have had a hard time getting up.

    So, you wake up at 5 30 and workout for about an hour? And then you also walk Sadie for a while?! how on earth do you fit all that in in the morning? What time do you have to be in at work?
