Vegan Chili

Even though the weather is already climbing into the 80s in Ocala, chili for dinner still sounded fantastic this evening.

I’d say it’s never too hot for chili, but I’m pretty sure that’s a lie. It does get too hot for chili, but it never gets too cold for ice cream! 

Tonight I prepared a big batch of vegan chili that I made by following a recipe from Skinny Bitch Book of Vegan Swaps.

The book was sent to me a few weeks ago as part of a Blogger Book Tour and, while I’m not vegan myself, I love preparing delicious, meatless meals and am always game for enjoying both vegetarian and vegan dishes.

I thought the book would include a lot more recipes detailing how to transform a traditionally meat-heavy recipes (like chili) into something delicious and vegan, but I was mistaken.

While there are a handful of vegan recipes included, the book is more of a vegan guidebook and provides a “label decoder” for vegans to break down ingredient listings on labels to make sure they’re eating 100 percent vegan. (I actually found this section really interesting, as it taught me about some of the obscure ingredients I see on many labels!)

The book also lists vegan-friendly restaurants by city, dairy swaps and brands that make great vegan food and where to find their products. A very large portion of the book is dedicated to listing vegan-friendly foods and alternatives which I would imagine would be a great resource for vegans, especially those who are new to veganism.

Unfortunately I am not vegan, so I’m not really the target market for this book and really was hoping it would be more of a recipe book that I would be able to frequently use. Luckily, the recipes that were detailed in the book that I did try, like the chili I made this evening, were very good!

The chili was hearty and packed with beans and flavor. Plus, it was incredibly easy to make which is always a great thing in my book!

Since I am not vegan, I figured that one of you out there who is vegan or would like to learn more about vegan alternatives would really enjoy this book and use it to its full potential, so I’d love to mail it to one of you!

    I just made chili for dinner tonight too!!! And it’s about 70-75 degrees here in southern california… But chili is pretty much always in season for me 🙂 Anyway, I’d love to receive the book! I’m always interested in reading more about the vegan diet. Thanks!

    I am also not vegan, but I read the book Skinny Bitch a couple of years ago and have lately been experimenting with an increasingly more clean eating lifestyle. I would love a copy of the cook book! 🙂

    Some of the best recipes I have ever made are Vegan, so we cook them often! We try to make at least 60% of our meals meatless so this includes many Vegan meals too.

    I was literally JUST considering buying this book! I’m a new vegan (as in, this is my third week) and am constantly on the look-out for new resources to both inspire and educate my new lifestyle. I am loving it so far, and would definitely appreciate a great reference like this book!

    My husband and I recently watched the documentary Forks Over Knives and we’ve been trying to change our eating habits to a vegan plant based diet. One of the hardest parts is just learning how to use new ingredients as substitutes. We would love a copy of the book!

    Hi Julie,
    I’ve become a big fan of your blog. I have been reading it for the past few months and have made a lot of your recipes and they have turned out great :)Some of my favorites are your smoothies and oatmeal, I love having those for breakfast. I am not vegan but I did read the Skinny Bitch book. It was a really good book and it really made me think about what I eat. I bet the recipe book is just as good!!

    About a year ago I took beef, chicken and pork out of my diet and am limiting fish to 2 times per week so this book would give me ideas to get me out of my rice and beans rut!

    Looks like such a good meal, I have to make it!!

    I have been a vegetarian since I have been 12 years old and recently started thinking about going fully vegan. I get confused in what I would be allowed to eat or not eat therefore this book would be a great starter!

    I must find (or be randomly selected for..) this book!! I am dairy free and many meals lend up being “vegan” for that reason. I need ideas and the literature on decoding sneaky dairy terms in the ingredients!

    Holy comments! I would love the book! I eat what I like to call a “vaguely vegan” diet (hence the name of my blog) and eat a mostly plant based diet and no dairy (due to a very unfortunate allergy). Going full on vegan would be awesome but I’m not quite sure I’d be able to handle it. Either way I’d love to read the book and get some pointers. Those nutritional fact insights you mentioned sound really interesting!
