Vibrant Colors

Right before lunchtime today, I headed off to the grocery store.

I’m pretty sure cheese and beer wouldn’t make a nutritious midday meal and since that’s basically all we had in our fridge, I needed to pick up some food.

Lunch

After unloading the groceries, I fixed myself a plate for lunch.

As I was unloading the groceries, I ended up eating a good amount of the fresh mozzarella cheese I bought with the intent to make a caprese salad for lunch, inspired by the one my mother-in-law made yesterday.

Well, after eating a bunch of the cheese before I had a chance to assemble the salad, I opted to use a bit of it in a sandwich instead since I figured that would come together faster and I didn’t feel like chopping vegetables.

At the rate I was eating cheese, all of it would’ve been gone before I had a chance to sit down to eat a salad, so a sandwich ended up being a fast and equally delicious option.

I ate the fresh mozzarella atop toasted honey wheat bread with yellow tomato slices, spinach and pesto.

Sides included strawberries and raw almonds.

Oh healthy food, I missed you and your vibrant colors!

I also wanted to say thank you for all of the yummy dinner suggestions you guys posted in the comments section of my morning post.

You now have me drooling over new dinner ideas! From casseroles to breakfast pizza to pasta dishes and homemade soups, I am pumped! Sometimes all it takes to get out of a food rut is taking the time to plan and get excited about meals again. Hoping tonight’s dinner is a winner!

    i absolutely love fresh mozzarella cheese! my favorite way to use it is in my fresh tomato and mozzarella pizza recipe – it’s super easy to make and full of fresh flavor.

    I love fridge pictures, haha! It’s always fun to see what staples other people get at the grocery store.

    I’m a little late in the game with a dinner suggestion, but I thought I would suggest another one anyways 🙂 I LOVE these sweet potato burritos (I use black beans instead of kidney beans) :

    Beer and cheese sounds like a delightful lunch 😉 but since you expanded your selection… Pesto on a homemade sandwich – yum! Did you make it yourself or do you buy a certain brand?

    Mozzarella makes everything better 🙂 If you make another one and want it to taste incredible, you should try adding some reduced balsamic – takes a few more minutes, but totally worth it! Also, I love that pink plate!

    Yum! I love fresh mozzarella! One of my favorite sandwiches is the tomato mozzarella panini on baguette from Panera, so so good!

    Lunch looks delicious. Love the open face sandwich even if you almost ate all the cheese. LOL. Love the CHO in the fridge too. Just tried blood orange this morning. YUM!

    Maybe the hubs and I are complete vultures but we’d be able to clean through your fridge in two days (ok maybe three). I say this without an ounce of judgment just an observation. How often do you go food shopping?

    And not sure if my “name” gives it away, but I absolutely love fresh mozzarella or “fresh mutz” as it’s called my neck of the woods.

    I know exactly what you mean. Cheese, beer, and soy milk was all that I had in mine before I headed out to the store today. It feels good to be well-stocked!

    I’m straight obsessed with mozzarella. I could definitely put away an entire block of it in one sitting if I lost all self control! It’s just soooo addicting! Haha.

    We desperately need to go shopping too. Thankfully we have a chest freezer with a bunch of fruit, veggies, fish and meat to tide us over when the fridge goes empty. That extra freezer is one of the best things I ever bought for the kitchen.

    Love that lunch! My family and I made a PIZZA similar to your sandwich this weekend:

    pesta + fresh mozzarella + tomato slices = A WINNING COMBO!

    Even my meat-loving husband devoured the vegetarian dish with no complaints 🙂
