As always, last week’s meals were simple to prepare and all photos were snapped in real-time — no fancy food photography allowed! You’ll see a mix of casseroles and curries, Instant Pot meals and reheated freezer food. Hopefully at least one of the meals below will pop out at you if you’re looking for some dinnertime inspiration this week! (Note: I’ll try to bring notes about the boys’ plates back next month. I just simply forgot to write them down this week and my brain is mush and cannot remember them!)
Week of Weeknight Meals: June 2025
Monday: Grilled Chicken Thighs (using our fav Paleo Chicken Marinade) + Avocado Corn Salad
Ryan grilled a bunch of chicken thighs for us for dinner and also to use as leftovers for lunches during the week on Monday night. I marinated the chicken in our forever favorite paleo chicken marinade and we ate the chicken thighs with a corn and avocado salad on the side. To make the salad, I didn’t measure anything but combined sweet corn (frozen but thawed), lots of cilantro, freshly squeezed lime juice, salt, a dash of red pepper flakes, red onion, green onion and avocado. It was wonderful!
Tuesday: High Protein Lasagna
Our family’s love for this high protein lasagna is still in full swing! I’ve made it weekly for the past few months because we love it so, so much and it’s a breeze to whip up, which is not something I ever thought I’d say about a lasagna recipe.
Wednesday: BBQ Chicken Salad Grain Bowl
Wednesday’s meal looked like a “clean out the fridge before we leave for Florida” kind of dinner. I wanted to use up our fresh produce and topped a bed of brown rice with finely chopped romaine lettuce, cilantro, corn, red onion, avocado and BBQ pulled chicken, all tossed in an avocado lime ranch dressing. It was fresh and delicious!
Thursday: Lasagna + Salad
On Thursday evening, we arrived at my parents’ place in Florida around 8 p.m. and were greeted by the smell of lasagna! Lasagna twice in one week? Sign me up! We had my mom’s lasagna paired with a simple side salad which was kind of like dinner 2.0 since we also ate some sandwiches I packed in the car around 5 p.m. because I just cannot seem to wait to eat dinner until 8 p.m.
Friday: BBQ Pulled Chicken Sandwiches with Carrot Apple Slaw and Avocado Corn Salad
When my mom and I were brainstorming food to bring over to my sister’s house for dinner on Friday night, a few dishes were fresh in my mind since they were recipes I made within the past week at our house. We settled on BBQ pulled chicken sandwiches (we followed this recipe for the chicken), carrot apple slaw and the same avocado corn salad I made on Monday night! It was the perfect easy meal for a hot Florida Friday night.
