What to Choose…

This just in: Roasted eggplant in pasta is ah-maze-ing!

I love veggies that pick up the flavors of whatever you throw at them.

The roasted eggplant in my lunchtime noodle bowl really meshed with the cheesy flavors of the Parmesan and Laughing Cow light original Swiss cheese.

Eggplant + Spinach + Noodles + Cheese

Parmesan Cheese

It was a cheesy, creamy noodle bowl with the added nutritional punch of eggplant and steamed spinach.

Lunch

I thought I might miss my beloved marinara sauce when I was throwing all the ingredients together, but the two cheeses were strong and definitely didn’t make me miss my favorite red sauce. I will surely be making this noodle bowl again in the future!

Snack Time

Snack time today was worthy of a mention.

Blueberry Bliss Luna Bar

Blueberry + Oats

The blueberry bliss Luna bar arrived in the goodie bag from Janetha yesterday and I knew it would make the perfect snack around 10:30 this morning.

The taste actually reminded me a lot of blueberry Nutri-Grain bars, but the texture was different. It was yummy!

Dinner Plans

Tonight I am meeting up with some of my girlfriends at Season’s 52, my favorite restaurant on the planet!

We’re celebrating my birthday since I haven’t seen any of them since I turned the big 2-5.

If it’s available online, I like to check out a restaurant’s menu ahead of time and have a few yummy dishes in mind before I arrive for a meal.

Several dishes are currently calling to me…

Of the following entrees, which would you choose?

  1. Caramelized Sea Scallops grilled and served with roasted asparagus and sundried tomato pearl pasta
  2. Grilled Boneless Rainbow Trout with parsley new potatoes, fresh roasted vegetables and broiled lemon
  3. Spring Market Vegetable Plate with cranberry almond tabbouleh, fennel, plum tomatoes and grilled tofu
  4. Garlic Chicken Flatbread with balsamic red onions, roasted red peppers and Mozzarella cheese

I’m leaning toward the scallops at the moment…

    As a vegetarian, obviously #3 would be for me…BUT, if I still ate meat, I’d be ALL over number 1 or 2!

      Chop it up, spray with cooking spray & sprinkle w/ garlic salt. Roast in the oven at 415 degrees for approx. 25 min., flipping halfway through.

    Definitely scallops…though I tend to choose those anytime they’re on a menu, so I’m partial. Asparagus is perfect right now, too! 😀

    I went to Seasons 52 for my birthday lunch with my boyfriend yesterday! One just opened outside of Philly, where I live, and I knew I had to try it!! We split the Artichoke/Goat Cheese flatbread (weekly special) and I got the Tuna crunch salad. Our server also highly recommended the scallops, so I’d go with them!!

    Oooh the sea scallops look wonderful. I love anything with sundried tomatoes! Eggplant is wonderful, although it’s been a bit too pricey lately. Hopefully it will come into season and I’ll be able to start incorporating more into our meals.

    Scallops definitely!

    If they have the buffalo steak as a special, I have to tell you that I really enjoyed that meal when I was there. I’d really recommend it if you like buffalo. It came with the most delicious ancho chile sauce and a really tasty avocado salsa on the side.

    I’d go with the trout. The scallops dish sounds great, but I have a hard time getting past their texture. Sounds like a fun evening. And you totally inspired my dinner. I have two eggplant in the fridge I’m going to eat with pasta tonight.

    Caramelized Sea Scallops grilled and served with roasted asparagus and sundried tomato pearl pasta <–PICK THAT!! I just had it @ Seasons 52 & LOVED it- the scallops were perfect!! Also, when I was there, they had 'eggplant parmesan flatbread' as an appetizer & I HIGHLY recommend that as well if it's still there- it was one of the specials on the side 🙂

    The caramelized Sea Scallops!!! I haven them almost every time, they are soooooo yummy!!!! And make sure you get lots of mini-indulgences (my favorite part of the meal) Have fun with all the girls tonight!!!

    Oh gosh they ALL sound good – seafood always wins for me though 😉 so I vote scallops as well!

    Just make sure you save room for birthday dessert!

    The rainbow trout dish looks like pure awesomeness! That’s what I’d be hitting up…

    And I always look at the menu beforehand (if I can). This only screws me over when I have my heart set on something and the menu has changed… then I get all flustered because I have to start all over… I’m weird like that.

    I have never tried scallops although that dish does sound good! The flatbread sounds right up my alley! Have fun!

    I just had a luna bar for a snack today too!!! I had the chocolate peppermint stick and it was soooooo great! Cant find the blueberry anywhere!!! Also..I would def choose the scallops! 🙂

    I ALWAYS check out restaurant menus online! It’s so helpful…otherwise, I’d be sitting staring at the menu for 20 minutes holding everybody up!
    I say go for the Garlic Chicken Flatbread…the roasted red peppers sealed the deal! YUMM!

    Go for the scallops. My boyfriend and I were at Seasons a couple weeks ago for a date night, and he got the scallops and I got the trout. I was not impressed by my dish (the best trout I’ve had is at Bonefish in Altamonte), but his was DELICIOUS.

    Have fun, Seasons is one of my favorite restaurants! I tried to get my boyfriend to go there for HIS birthday (today) … but he wanted steak so we’re going to Outback instead 😉

    I had scallops tonight – they were awesome! i absolutley love your blog and always get some great inspiration from it.     i just clicked to that restaurant and they are opening one in schaumburg…omg i’m so excited! i just looked at the menu too…cedar planked salmon – of course that is not one of your options, haha.

    i would go for scallops. when i eat out, i order things that i can’t make and seafood is definitely something i dont cook often. have fun girly!

    Mmmm, tough choices, but I am thinking that Market Veggie Platter is sounding amazing. Probably because its so rare to find something like that on any menu around here. I swear, tofu doesn’t exists in PA! 🙂

    I just wanted to say that I just started reading your blog about a month and a half ago and now am addicted. I am a 25 year old 4th grade teacher in Texas getting married July 31st. Your eating habits are so similar to mine, very healthy yet with wiggle room. I recently lost 45 lbs and have begun eating this way. Thanks for being an inspiration and keeping me on track:-)
