Wheat Germ Chicken

Sometimes I find myself eating the weirdest foods. I’ll eat raw oatmeal straight from the container, peanut butter from the jar with my fingers (but you knew that) and, most recently, wheat germ from the jar with a spoon. Not sure where that one came from, but I am lovin’ it!

I bought that particular jar of wheat germ on Sunday and ate all that you see is missing from the above picture straight from the jar with a spoon. I’m special. Winking smile

I figured it was time to use the germ in an actual recipe! After taking Sadie on a short walk in the rain (she toughed it in her rain coat), I came home and got to work in the kitchen.

Since Ryan had to work late, I figured I would make a meal I know he loves… which is basically anything involving chicken.

I took two large chicken breasts and dredged them in a scrambled raw egg before rolling them in a mixture of 1/4 cup wheat germ and 1/4 cup Italian bread crumbs.

I then baked the chicken in the oven at 350 degrees for 25 minutes. While the chicken was baking, I roasted broccoli and cauliflower in the oven as well to enjoy on the side. (Ah! I still owe you guys a video on how to roast veggies! I’ll get on that ASAP!)

After snapping this picture, I grabbed some BBQ sauce to use as dip for the chicken because I wanted a little extra flavah!

And then, about 30 minutes after dinner, my sweet tooth started kickin’.

I shut it up with a smoothie bowl!

In the mix:

  • 1 c. frozen strawberries
  • 1 c. almond milk
  • 1 tbsp. cocoa powder
  • 1 scoop chocolate protein powder
  • 2 pinches xanthan gum
  • 2 handfuls fresh spinach

Don’t be surprised if you see this bad boy resurface in the morning. Smile

Until then, I’m off to watch Cupcake Wars and dream about Sunday when Lent officially ends and I can eat my bodyweight in sweets.

I already exchanged many texts with my sister today about what flavor I want my birthday cake to be! I’m celebrating my birthday (which is actually next Wednesday) with my family on Sunday night and have requested an ice cream cake. Cake + ice cream + icing… throw some cookies and brownies in there and I’ll knock out nearly every dessert I’ve missed during the Lenten season in one swoop!

    wheat germ with a spoon… doesn’t it stick to the roof of your mouth? every time I see your smoothies I remind myself to buy xantham gum so I can take mine to the next level like yours haha 🙂

    Ice cream cake is the jam!!! It’s the only kind of cake my parents & boyfriend ever get me for my birthday now. That’s the perfect way to welcome sweets back into your life!

    I eat really weird things right out of the jar too by the spoonful.. including oats, unsweetened coconut, any cereal that is raw and requires heating.. uncooked pasta. I tried quinoa.. but that didn’t turn out too well.

    I have to thank you for turning me on to Bone Suckin’ Sauce recently. I literally drink it out of the bottle. AMAZING.

    You could combine your dessert on Sunday. A brookie (brownie cooked inside a cookie). And make the brookies into ice cream sandwiches. On top of a frosted cake.

    I am liking this wheat germ idea… I’m a big fan of chicken in Italian breadcrumbs, but I never thought to add wheat germ into the mix! Def have to try that.

    And that is IT. Your smoothies look ridiculously thick. I am done being J to the EALOUS about them and I am buying xanthan gum ASAP!

    Birthday cake is the best! My favorite is my mom’s yellow cake with chocolate frosting … or of course, FUNFETTI cake! I would never turn down any kind of cake though. Ice cream cake is BEyond amazing; have you ever had Coldstone’s? It’s to die for!

    I am going to invest in some wheat germ asap; I’ve been wanting to try it and now u just gave me the push I needed!

    Every time you show a smoothie bowl I’m ready to go out and buy that Vitamix. I’m trying to convince my boyfriend that it’s something I really need in my life even though I have a different smoothie maker/blender that’s only a year old.

    Don’t underestimate wheat germ from a jar!

    I think just about everything tastes better from the container: pb, ice cream, cereal, wheat germ fits the bill too!

    I have done the exact same thing with wheat germ since i was little! my mom used to catch me standing on the counter pouring wheat germ into my mouth, totally normal…right?

    Ice cream- I die! I havent eaten it in so long but that needs to change! I thought I like oats but even eating it straight up out the box is a bit hardcore for me ;)!

    Just had chia seed overnight oats and it was a success! Already looking fwd to tomorrow’s brekkie!

    I totally love wheat germ. I always use it in my waffles and granola bars. I eat a ton of chicken and it never occurred to me to use it then. I am going to now! Thanks!
