Would You Like to Stay for Dinner?

Back in high school I loved eating dinner at my friends’ houses. That’s not to say that my mom didn’t make us fabulous food, because she definitely did, but I loved trying out the goods other people ate on a regular basis.

I loved it when dinnertime approached and I’d hear the fabulous question, “Would you like to stay for dinner?” Yes, please!

One of my favorite dishes was served at my friend Kristen’s house. Her mom made the best pasta salad, full of noodles, veggies and Italian dressing. (I tried my very best to recreate it in December.)

My love for pasta runs strong, but I almost always enjoy it hot and often topped with marinara sauce. Today I changed things up and drew inspiration from Mrs. Bauer’s pasta salad.

Italian Pasta Salad

My noodle bowl included:

  • 1.5 servings Carba Nada pasta
  • 4 tbsp. light Italian dressing
  • 100 grams chopped yellow squash
  • 50 grams chopped portobello mushrooms
  • 60 grams chopped broccoli

I made the pasta salad after dinner yesterday and let it soak up the goodness from the Italian dressing overnight.

By lunchtime it was cold, zesty and delicious!

    I’ve never been a fan of pasta salad. It’s something about the cold noodles…I just can’t do it! I’d eat that hot though 🙂

    My best friend lived right next door to me, and we would always check in with both houses to see who was cooking the better supper. If both of them looked good, we’d just eat twice! Her mom is from the Philippines and cooks some truly amazing dishes from there, so I enjoyed some gooood eating at her house.

    Yes, I always loved eating at friend’s house’, but only if they were making something good. My friend, Maja’s dad made the best barbecue chicken….my old friend Jessica’s mom made the best tacos….it could go on and on!

    For me eating at other people’s houses meant eating pizza and burgers since my Mom didn’t get them very often I was in heaven!

    I definitely miss eating at friends’ houses! Over the summer I would eat lunch at my friend’s house everyday – grilled cheese, doritos, oreos, a glass of milk. Ah the good ol days 🙂

    I had such a crazy appetite that sometimes I would eat at my house and THEN eat again at my friends b/c I love food so much! LOL! 🙂

    That pasta salad looks awesome!! I used to love spending the night at my BFF’s house b/c her mom would make us monkey bread for breakfast!!!!! SOooooooo good!! 😉

    your pasta salad looks delish! Question for ya! Is there a reason that you weigh your vegetables? I noticed this the last couple days and just wondering since it’s not often that you see people weighing their veggies!:) Is it so you can count calories? Just curious!

      i actually weigh them for you guys! i’ve had people email me asking the amts. of things i use in my dishes, so rather than dirty up measuring cups, i just bust out the scale. i do not count my calories. 🙂
