Lunch today snuck up on me!
Before I knew it, my stomach was grumbling and I needed food!
Fact: This meal looks horrendous.
But lots of shredded cheese has a way of making me overlook an unattractive dish!
I began by sautéing a chopped chicken sausage in a skillet while I steamed some cauliflower in the microwave. I then added leftover roasted Brussels sprouts to the skillet, followed by the mashed steamed cauliflower and a boatload of shredded cheese.
Easy, satisfying, ugly and delicious!

The Fault In Our Stars by John Green. We’ll be discussing this book on the blog on Friday, April 5. I can’t wait to start reading!
Now let’s talk about St. Patrick’s Day running gear…
St. Patrick’s Day Running Gear
Are any of you out there planning to run in a St. Patrick’s Day race?
Ryan, my sister, my sister’s boyfriend and I will be running in a 10K on St. Patrick’s Day and ever since we signed up to participate, we’ve been sending each other costume ideas. You know we like to dress up for races together!
Here are some winners:

These girls look so cute in their green tutus!
More St. Patrick’s Day gear that caught my eye…
I saw a bunch of women wearing fun sparkly skirts over their leggings or compression shorts at the Women’s Half Marathon a few years ago and thought they looked awesome! (Bachelor fans, I think we know Tierra would be all about this one. Sparkle.)
You guys know how obsessed I am with these headbands by now. When I saw the shamrock headband on their website, I just had to have it. A headband that doesn’t slip that’s also peppered with lots of little shamrocks!? Oh yes! (Get psyched because YOU have a chance to win a $40 BICBands gift card that you can use toward one at the end of this post!)
- Target $1 Bin Finds
Surely I’m not the only one out there who gets suckered into the Target $1 bins? I found a bunch of goodies in the $1 bins last weekend that I picked up for our upcoming race, including blinking bracelets, wigs, light-up rings and more. I was especially pumped about the neck ties!
Just in case your running shorts are a little too big.
I’m not gonna lie, these PRO Compression shamrock socks shamROCK my socks off. (Sorry, I just can’t help myself.) I saw Monica and SkinnyRunner blog about them last week and was so excited when they sent me a pair to try! (You can use the promo code MARCH for 40% off any of their marathon socks or calf sleeves right now!) I can’t wait to wear them during next Sunday’s 10K!
- More Fun Knee-High St. Patrick’s Day Socks
Target comes through in the clutch again with a bunch of knee-high St. Patrick’s Day socks for only $5!
I found this little gem in the Race Junkie’s Etsy shop and thought it was adorable!

I’m not doing a St. Paddy’s themed race this year, but last year I did an 8k that was SO much fun! I wore a green tech shirt and green beads. My favorite food to enjoy, if you can consider it one, is an Irish car bomb! They’re strong but delish {as long as you chug it before it curdles!}
Liz @ The Shrinking Owl says
My favorite St. Patrick’s Day memory was my freshman year of college… and I’ll leave it at that. 😉
Britton says
I always run the Get to the Green 5k in Columbia, SC but this year they have added a 10k so I am doing that! It is such a fun race and I love the green beer afterwards!!
Kim B says
The first race I ever ran was a St Patty’s Day 5k in Baltimore! And…I always have to make corned beef and cabbage…it’s usually the only time during the year I have it and it’s so good!
Laura says
Favorite St. Patty’s day memory: Running my first half-marathon last year in DC (the Rock n Roll half) on St. Patty’s day with my friends!
Kelly R says
My favorite foods to eat on St. Patrick’s Day are the green colored pancakes and green colored milk that my mom makes!
jillian says
my first race EVER was a Shamrock N Roll 5k! I went on to run 5 half marathons, 2 fulls, and a bunch of others… but it will always have a fond spot in my heart!!!! good memory!
Kayla says
We always hunt down green beer. I’ve been in several different cities for St. Pattys the past few years, but without fail, we find green beer!
Annie M says
I love having Reubens or shepherd’s pie and beer on St. Patrick’s day. It’s even better if the beer is green!!
Kaitlin @4loveofcarrots says
I love these costume ideas! My dad and I always run a st. patricks day race that is 4 miles, its probably my 1 and only st. patricks day tradition that has remained over the yrs.
Tracey says
One day I forgot it was St. Patrick’s Day (so tired from school all week and was at work Saturday morning) so I didn’t intentionally wear any green clothing. Fortunately, I looked down and saw my socks were green so no one was able to pinch me. 🙂
Taylor says
My most memorable (maybe not my favorite) St. Patrick’s Day was in 5th grade when I broke both of my arms at the same time!
Suzi says
I am running the JLA Shamrock n’ Roll 5K for St. Patty’s Day. I’m been shopping for my outfit today 🙂
Jenn says
Love BIC Bands! I ordered the sparkly green one – which I would have seen that Shamrock one before though!!
I am running the Shamrock Half Marathon in Virginia Beach on St. Patrick’s Day – hoping to go sub 2!
Dina says
I live in Boston and St. Patrick’s is a pretty big deal so every year I go to Southie to the big parade there… it’s a big deal around here!
Sidney says
Green beer is a St. Patty’s Day must 😉
Amanda @KnotLiving says
I fill my plate with green goodness! Spinach, broccoli, the works.
Val says
My favorite St. Patrick’s Day was last year, running in the Detroit Corktown St. Patty’s Day run. Corktown is an area of Detroit with a lot of Irish heritage and they celebrate St. Party’s Day (weekend) with a 5K race and a parade. The 5K race runs down the parade route before the parade so there are a lot of (inebriated) spectators to cheer you on!! (Or hand the racers beer while you run)
Very high energy race, with lots of fun costumes!!
Ashten Adamson says
I think the green beer is my favorite thing. And having one after a festive race is the best!
joie says
Oh, I used to love going to the ST. Patrick’s Day parade in DC with my mom. I know she hated going, but it was so, so fun for me. I loved the green bagels!
Jessie says
St. Patrick’s day was always a blast in college!
Liz says
My friends have a yearly tradition for St. Patty’s Day: The Shamrock Shuffle. They run to a bunch of historic Irish landmarks in Philly and finish up with a shamrock shake!
Claire says
I’d love to do a St. Paddy’s day race. As a fellow Chicagoan, it seems fitting, right? I have had a few St. Paddy’s days with one too many green beers, so I think I’ll be looking to hunt down Shamrock shakes instead! Pinterest has some great homemade shamrock shakes you should totally check out, probably FANTASTIC with Bailey’s!
Michele Dick says
My favorite food to enjoy on St. Patrick’s Day is corned beef also when my kids were little I would sneak green food coloring in their milk and blame the leprechauns.
Hope @ With A Side Of Hope says
I love having homemade Shepard’s Pie for St. Patrick’s Day. It’s so good 🙂 Comfort food all the way!
Mandy says
St. Patrick’s Day one of my favorite holidays. I’m part Irish AND it’s my birthday! I even have a shamrock tattoo..now that’s commitment. I love the compression socks…may have to get some!
Kaitlin says
My favorite “food” to enjoy is green beer of course 🙂
Rebecca says
Wooo! I love Bic Bands and these ones are SUPER cute! We’re actually hosting a St. Patrick’s Day party this year, featuring some of our favorite Irish foods. (I’m Irish so I get way too excited about this!) Corned beef, cabbage, potato bread (with Irish butter, of course) and Guinness Chocolate cupcakes with Baileys Irish Cream Cheese Frosting. Guinness, Boddington’s, and Irish whiskey to wash it all down.
Obviously, the Irish are not known for their emphasis on green veggies and lighter treats 😛
Ashley @ Life and Fitness says
My favorite food is the corn beef, so good since I only have it once a year!
Kassidy says
My favorite memory is when me and my friends all got together and got dressed up for a party, it was awesome!
Emma Knighten says
I remember every year for st. Pattys day, in elementary school, my teachers always put the gold coin chocolates on our desks during recess and joked that leprechauns had snuck into our room! I wish “leprechauns” snuck into my work to deliver chocolate!! 🙂
Jessica DeSantiago says
I’m all signed up for the Get Lucky! 7k in Minneapolis! I hope it’s not too chilly!
Lindsay says
One of my best friends’ birthday is St. Patrick’s Day so we always use it as an excuse to celebrate twice! 🙂
Jessica says
Corned beef and cabbage! Last year we had one of those mishaps where my dog ate the corned beef off the counter before we ate so I can’t wait to have it. For some reason I only make it on St. Patty’s Day.
Taylor says
A staple for St. Patty’s day is green beer! Although I am not sure that counts as a food! When we were little, my mom would make us green pancakes and green milk (with food coloring) on St. Patty’s day. Something about green milk is SO unappetizing.
MassachusEATS says
My mom makes the best corned beef and cabbage* (potatoes & carrots, too!) so hands down, that’s my fave St. Patty’s meal! Though the Guinness brownies I made last year are a close second. 🙂
[*The kicker is we aren’t even Irish haha.]
Julie H. says
I love to have delicious pub food (sooo not healthy) on St. Patricks day and of course wear lots of green and my St. Patty socks 🙂 It’s a day where I pretend I am Irish and usually get away with it thanks to my red hair and fair skin 🙂 🙂
p.s. my vote is for the tutus for your race!
Julie says
Favorite Memory: I was in first grade and the teacher claimed that she had a leprechaun living in her classroom…Every year the “leprechaun” would dye some part of this teacher green…and then put all kinds of St. Patrick’s day decorations and treats all over the room!! So fun!!
jill says
I love to eat/drink anything GREEN on SPD 🙂
Danielle says
My favorite St. Patty’s Day memory is wearing green and staying with my grandparents. My grandma would cook the most delicious corned beef and cabbage and mashed potatoes. She still makes the best mashed potatoes although I don’t really eat corned beef anymore, I still love smelling it on St. Patty’s Day!
Jessica says
I’m running the Virginia Beach Shamrock Marathon this St. Patrick’s day – hoping for a 3:45! I’ve been trying to find fun ways to incorporate green into my race day wardrobe without breaking the bank on new running gear, the shamrock headband may end up being a pre-race gift to myself!
Jamie says
I’m not Irish but at my work, we have a St. Patty’s Day Food Marathon tradition. The whole floor brings in food (bonus points for green food) and we pig out all day!
kandi says
I love to make a Guinness infused baked good each year!
Nicole says
Drinking green smoothies, eating lucky charms, and now I am going to look for a race to run!! Awesome giveaway!!!
Christie says
I look forward to eating Irish Potatoes on St. Patricks Day!!!
Diana says
We always go to our city’s big parade and have way too many beverages 😉
Sarah @ Hungry and Healthy in Houston says
My favorite St. Patricks Day is spending it at an Irish bar, Callaghan’s in Mobile, Alabama! We drank green beer and partied all day! It was a blast!
becca says
My favorite St. Patty’s day tradition is hopping over to McDonald’s for a Shamrock Shake. I love them!
Ashley says
Green Beer for St. Patty’s!
Melissa @ Freeing Imperfections says
So happy The Fault in our Stars was voted. Funny: I owe 40 cents from my last book club book being over due. What does 40 cents really do for the library? Anyway… I reallllly hope this one comes in on time. Looks like there are a ton of holds before me…
My favorite food to enjoy on St. Patrick’s Day is beer. Beer is a food, right? But for real, I love those soft sugar cookies with sugar crystal icing all over it. Preferably clover shaped. 🙂
