Crab, Corn and Potato Chowder

Toot, toot! <—That’s me, tooting my own horn after making this: 

soup 043That would be Cooking Light’s chunky potato-crab chowder… though I would consider it crab, corn and potato chowder because it’s chock-full of delicious sweet corn.

The recipe was really easy to follow and I had a pot of homemade soup ready in about 40 minutes.  

Though the recipe called for a lot of vegetable chopping, which is one of my least favorite aspects of cooking, all the slicing and dicing was well worth the effort.soup 027Sometimes recipes from Cooking Light can be a little too involved for me. I don’t like it when they require obscure ingredients that I cannot find at my local grocery store, but this recipe called for easily accessible ingredients, many of which I already had at home.  

When I opened up two cans of crab meat to add to the chowder, someone instantly started salivating…

Doesn’t she makes the goofiest faces?soup 029I really don’t blame her for getting all hot and bothered about the crab meat, because it was very fragrant and I couldn’t help but sneak several bites before adding it to the chowder.  soup 031I felt quite impatient waiting for the chowder to finish cooking on the stovetop. It smelled fantastic and was worth the 20 minutes I had to wait while the potatoes softened and the chowder thickened. soup 034If you’re a seafood and corn lover, I highly recommend this soup. I enjoyed it even more than the yummy oyster bisque I made less than a month ago.  

Though I love soups and stews very much, I’m a chowder girl at heart!

    Totally stew. I love cooking up a big pot of beans, vegetables, and spices when it gets cold it. Warm and hearty, sooo good.

    Definitely chowder. I love more thickness when eating a soup as I don’t enjoy all the broth. In fact I just made taco soup the other day, which was thick because you don’t add additional liquids. Check it out on my blog!

    Looks delicious – nice work. Chowders can be tricky. I personally go for stews because they’re easier to pack for work lunches. And I LOVE Cooking Light. Would die without it.

    Soups for me, they tend to be a little more on the healthy side side so i dont feel so bad about having two or three bowls at one time, but chowders are definitely a little more filling

    What kind of canned crab did you use? What area do you find that in the grocery store? My husband is going to love this!

      it was just a can of lump crab meat (geisha brand, maybe?). i found it by the canned tuna, canned clams and canned salmon!

    i just like anything thick…but it depends what’s in it. i don’t like really mushy veggies or noodles in my ‘liquid meals.’ ha! i’m picky 🙂

    Ahh, I love the Sadie face, my Vizsla makes some pretty ridiculous faces as well!

    How old was Sadie before you began running long distances with her?

      i probably waited until she was around 9 – 10 months to take her for a longer run. the longest run i’ve ever taken her on is 8 miles, but i read an article in runner’s world that said vizslas can easily handle 10+ miles! aren’t they the best dogs?

        Thanks for responding so quickly! I knew I would probably have to wait a while before I started running with her and I can’t wait. She is already so fast.

        I read that same article. It pretty much said Vizsla’s are the best running dogs!

        They really are incredible dogs and so loving. I am so happy I went with a Vizsla.

    Chowder all the way! Yours looks great–don’t know if I could convince the husband to eat it, because of the crab.

    My favorite is a Chicken Corn Chowder from cooking light–you should try it 🙂
