Healthy BBQ Chicken Pizza

Hold on to your hats my friends, because tonight’s dinner was fantastic!

Not only was it easy, but it required minimal ingredients and came together in less than 15 minutes!

Well, a little preparation was necessary since I placed two chicken breasts in the crock pot, covered them in one can of reduced-sodium chicken broth and let them cook on low all day (about 8 hours). But, if you’re short on time, you could easily substitute rotisserie chicken meat in place of the slow-cooked variety.

Once I pulled the chicken breasts apart using two forks, I poured enough Bone Suckin’ BBQ sauce on top of the meat to make it extra moist and flavorful. This step could easily be done ahead of time and would also make great use out of leftover chicken!

Once the meat was ready, I sprayed two cookie sheets with cooking spray and topped two Joseph’s Lavash breads (one for Ryan, one for me) with a layer of BBQ sauce, sautéed onions, fresh spinach, the pulled BBQ chicken and shredded Mexican blend cheese to make BBQ chicken pizzas!

I then put the pizzas in a 350-degree oven until the cheese melted (about 5 minutes – watch closely so the Lavash doesn’t burn!).

The pizzas were BIG and once Ryan and I saw the ooey gooey cheese, we couldn’t wait to dig in!

Yes, that’s one pizza, and we both practically licked our plates clean.

Such a good dinner!

    Do you purchase your Lavash bread online? I’m on the west coast, and have never seen this brand before. I usually make BBQ chicken pizza on fresh dough with chicken, red onion and cilantro, which is delicious, but this seems like a healthier option.

    Hi, just found your blog through healthy living blogs. As soon as I saw this pizza I knew that I had to try pizza on Lavash. Since I was grocery shopping tonight I was able to pick some up. I was pleasantly surprised to see how thin the Lavash was and was even more surprised by how tasty the pizza was! I’ll be using Lavash crust again. Thanks for sharing!!!

    Cannot wait to try this out! Actually making pizza for dinner tomorrow night ironically. Got a dough from Tjs (trader joes) though! Haven’t tried it out yet, but I hear good things.

    And your crock pot meals are going to be my new experiment for my senior spring semester come next week!

    For your chicken recipes, do you use frozen boneless skinless chicken breasts? Or do you buy the fresh chicken breasts? Do you think it makes a difference?

    i just waned to say that i have fallen in love with your blog – i made this pizza today minus the spinach because i didn’t have it on hand, but added some fresh basil which i had growing on my porch and used a whole wheat boboli pizza crust – it was absolutely delish!! i can’t wait to try more of your recipes and smoothies! i am new to the whole eating right and fitness world – but after 4 months and loosing 20#’s i have never felt better. so thank you for sharing everything with the world 🙂 i enjoy every moment of it !
