Pseudo Ice Cream

After quite an active morning, the rest of our Sunday was exactly what a Sunday should be… relaxing! Ryan and I cleaned up around the apartment, did some laundry and hung out in the backyard with Sadie while soaking up the sun.

Snacks from the afternoon included a million peanut butter fingers and a toasted English muffin with melted shredded cheese and raspberry jelly.

The cheese and jelly combo is good on any kind of bread but I like it best on a toasted cinnamon raisin bagel. It just works.

Dinner

Since we were working around the apartment, we had plenty of time to make a more in depth dinner and when I expressed my interest in veggie lasagna, Ryan was more than game. Unfortunately I didn’t have all the makings for traditional lasagna, but I did have all the ingredients required for roasted eggplant lasagna!

I got to work and within an hour, we had a deliciously cheesy dinner ready for eatin’.

Between the two of us, we finished the entire dish!

Ryan said this lasagna tasted “meaty” which is funny since there’s absolutely no meat in it whatsoever. It might be worth a try for those of you out there with he-man meat eaters to feed!

Dessert

Since I have exactly one week left until it’s Easter and I can enjoy the sweets I gave up for Lent again, I had to get a little creative in the kitchen when I felt my sweet tooth start kickin’ in after dinner.

I grabbed a bag of frozen pineapple, almond milk and Greek yogurt and threw the three together into the blender. I went very light on the almond milk in an attempt to make a creamy and fairly thick pseudo ice cream.

I would estimate that I used the following measurements:

  • 1 1/2 c. frozen pineapple
  • 1/2 c. vanilla Greek yogurt
  • 1/2 c. almond milk

It was delicious and definitely satisfied my desire for something cold, creamy and sweet. I only wish I had all the mix-ins that Mochi has to take this pineapple “dessert” to another level!

    You should try banana soft serve! (Blend up frozen bananas for about 3 minutes and add a tiny splash of milk if needed) It is life changing!!!!

    Wow, Julie when you first said you were giving up sweets for Lent I thought, “no way, this will be so hard for you.” But you are doing sooo good by making this ice cream, and especially after resisting cookie dough milkshakes the other night with cinnamon rolls. Great job! Only one week left! What is first on your list to celebrate with?

    Your dessert actually reminds me of a place up here that makes “froyo” from only fruit and water. I have no idea how they do it, but it’s absolutely delicious!! I’ll be the pineapple flavor was awesome.

    I started reading your blog about a month ago after googling something about the cinnamon raisin bagel thins (LOL) & love reading it! I FINALLY had a chance to try your fave combo myself (I did the bagel thin, muenster cheese, jam, & thinly sliced apple). It is really good! Just wanted to share the mutual love!

    I love making myself smoothies like that. Maybe for add-ins you could add raisins or chopped up grapes or applie slices… or pomegrante seeds?

    Hey! Love your site so much and love your recipes too. I tried your spaghetti squash recipe and it was so great! Question: After taking it out of the oven, was yours a little crunchy when you forked out the spaghetti squash, or were your “noodles” a softer, boiled spaghetti-like consistency? Some of mine were softer and some were a bit “crunchy” consistency. But it was good either way, so thanks for a great healthy substitute!

    That pineapple ice cream looks so refreshing! I’m so giving it a shot!
    Peanut butter and bananas (or chocolate) may be the best sweet combo but where savory is concerned, nothing goes together like tomato sauce and cheeeeeze!

    I love eggplant! That lasagna looks great! I love making eggplant parm! Yummy! 🙂

    I really hope either the Harvest Sol or the Indian concept win on Next Great Restaurant. I think it would be pretty cool to have a fast food Indian food type restaurant. I’ve never tried Indian food before. So I think it would make an interesting concept store. 🙂

    Love the pseudo ice cream idea…frozen mangos make a great substitute too–you can get them already chopped up in the freezer section, and they are nice and cold, sweet, and delicious!
