Sweet Potato Wedges

When I got home from work, Ryan and I took Sadie on a walk around the neighborhood before heading to the grocery store to pick up some essentials for the week.

While there, we also nabbed a couple of sweet potatoes to incorporate into our dinner this evening.

I started by slicing the sweet potato before tossing the wedges in canola oil and salt.

I then spread them out on a cookie sheet and baked them at 415 degrees for approximately 20 minutes, flipping them halfway through.

We enjoyed the wedges along with muenster cheese and Morningstar Farms veggie bacon sandwiches.

It was a pretty random dinner, but it was also exactly what I was craving!

The rest of the night will be spent curled up on the couch with a movie.

Ryan and I wanted to see it when it was in theaters, but never got around to it. We’ve heard great things, so let’s hope it’s a funny one!

    We watched that last night!! Laughed so hard! Probably would be a somewhat weak movie on it’s own, but Tina and steve are amazing!!!

    I love sweet potatoes! The Whole Food’s cold bar has some seriously awesome cajun sweet potato rounds. Delish! Yours don’t look too bad either. 😉

    I got a tip from Rachel Ray to boil the slices for 5 minutes before baking. Since I started doing that they have been crisping up very nice!

    I am not allowed to have Morningstar bacon anymore, 2 plates shattered in our microwave, and I burnt a paper plate, sadly I only nuked them for 1 1/2 minutes!

    I hope you enjoy it! It’s hysterical!! And I want Tina Fey’s dress!! Apparently it was made specially for her in this movie (so it’s not a commercially made dress), and there were like 20 of them, since she had to mess them up so much during shooting.

    I have never commented on your blog but first off, love it!! Secondly, had to comment on the sweet potato fries- toss them with paprika and cinnamon!! HOLY COW delicious!!! Odd combination and not sure where I found that recipe but its so darn good. Do it! 🙂

    Mmm yum! I love sweet potato. I had a pretty random dinner today too… corn on the cob, apple with peanut butter, and tortilla chips.

    I liked Date Night alright but it wasn’t as funny as I was expecting. We did leave the theater quoting some of the lines though. You can’t go too far wrong with Tina Fey and Steve Carrell.

    I LOVE Date Night. I saw it twice in theaters and am now the proud owner of the DVD. I realize I sound a bit obsessive but the movie is that good. haha

    Sweet potato fries (or wedges) are so delicious! It’s hard to believe they’re so good for you. I thought Date Night was pretty funny! My friends and I saw it in theatres and we all enjoyed it.

    I love that movie, it was pretty funny!
