Buttery Smoothie

Last night as Ryan and I played Words with Friends on the couch while watching the Harry Potter movie marathon on ABC Family (so cool, I know), we sipped on butter pecan milkshakes that I made with butter pecan ice cream and a teeny bit of this magic potion…

I threw this into the shopping cart at the grocery store yesterday thinking it could add a punch of buttery flavor to cupcakes, baked goods and even milkshakes and smoothies.

Boy was I right! Our milkshakes were fantastic and this morning I awoke wanting another one.

I decided to go the healthy route and rather than make another butter pecan milkshake for breakfast, I made myself a smoothie!

In the mix:

  • 1 1/4 c. almond milk
  • 1 scoop vanilla protein powder
  • 1 small frozen banana
  • 1 c. frozen strawberries
  • 1 large handful fresh spinach
  • 1 pinch xanthan gum
  • 1/2 tsp. butter and nut extract

This smoothie had a cake batter-like flavor thanks to the extract. I see this extract poppin’ up in a lot of recipes on this blog in the future. I bet it would be delicious stirred into a warm bowl of oatmeal.

Off to start the day! Sadie needs her morning walk.

    The only three extracts I’ve ever seen in my grocery store are vanilla, mint, and almond. I think my grocery store needs to jump on the butter &nut extract bandwagon ASAP!

    Your smoothies always look so yummie!! What protein powder do you use? ALso do you eat something before you go the the gym on your early mornings?

      i use all the whey or gold standard optimum nutrition protein powder. and i usually don’t eat anything before working out on weekdays b/c i get crampy if i eat w/in an hour of working out and i’m not about to wake up in the 4 a.m. hour.

    I’m starting to make my own extracts because the store bought ones scare me. The only one so far is vanilla though. The flavored extracts just make me wonder what kind of chemicals they are using and what other scary things are they in?

    Hi, I have been lurking for some time now but love your blog. It is HOT here and I came home from some errands and you inspired me to try a smoothie with spinach in it, (husband was skeptical) Loved it!     That sounds really good. I love playing around with different extracts. Sometimes I’ll use maple extract in my oatmeal and one day I accidentally pet the dog before washing it off my hands and he smelled like maple syrup for a week.

    stupid question, but when you freeze bananas do you freeze them with their peel on? or do you take them out and wrap them in saran wrap?
