Fruit Filled

Today’s lunch was filled with fruit.

It began with Publix fresh fruit salad.

The honeydew and cantaloupe (at the bottom of the bowl) were on point. The watermelon? Not so much. Such a shame! It looked like it would be perfectly sweet and juicy, too!

My little fruit fest continued with a smoothie that looked like death.

I love using cocoa powder and chocolate protein powder in my smoothies, but when you combine rich browns with bright green from the fresh spinach leaves, the result is one highly unattractive smoothie.

In my smoothie:

  • 1 1/2 frozen bananas
  • 1 scoop fitmixer chocolate milkshake protein powder
  • 1 spoonful peanut butter
  • 1 spoonful dark chocolate cocoa powder
  • 1 large handfuls fresh spinach
  • Enough almond milk to get everything moving

To round out my meal, I polished off the remaining white fudge covered pretzels I bought (buy one, get one free!) at Publix earlier this week.

It was an all-around sweet lunch!

And now I’m craving something with marinara sauce for dinner. Any suggestions?

    I was craving marinara sauce last night, so I made a really yummy and easy dish! Put 4 (or however many you want) boneless/skinless chicken breasts in a pyrex dish and dump a jar of your favorite marinara sauce and sprinkle some cheese on top- bake it. It is AMAZING!!! I think it might even taste better the next day 🙂

    I’ve been loving this marinara squash bake lately. Sounds a little odd, but I really like it!

    Take 2-3 yellow squash/zucchini or combo. Slice ¼-1/2 inch thick. Combine with a can of white beans (rinsed and drained) and enough marinara sauce to your liking. Add any dried herbs you’d like. Place in a baking dish (I use an 8×8 pyrex) and top with nutritional yeast (I bet Parmesan or breadcrumbs would work well, too). Bake at 350 for about 25-30 minutes until squash is cooked and the mixture has thickened. Serve with brown rice.

    Either way, enjoy a lovely dinner with your favorite people! 🙂

    I love this Healthy Eggplant Rollatini recipe! You can use zucchini instead if you are not an eggplant fan.

    Eggplant manicotti! riccota/egg mixture wrapped in eggplant, top with marinara and some mozzarella and bake.

    I think the best smoothies are the ones that look gross, greens and protein powder are awesome in smoothies!

    Whip yourself up some homemade gnocchi or roasted eggplant spaghetti, marinara sauce with toasted breadcrumbs on top!

    I agree-those spinach/chocolate smoothies look nasty…but they taste great! Hah.

    For dinner I’d say spaghetti or ravioli!

    I have been wanting to try the ‘spaghetti squash’ thing for a while now but I am just not brave enough. It seems like a lot of work and I have heard of a lot of failed attempts. I will try it one day!
    And you should never judge a smoothie by its color! 😉

    Cauliflower crust pizza is a fun twist on the usual–there are lots of ways to make it if you try google-ing it–and I also have my favorite variation on my blog.

    Yes, the smoothies aren’t always pretty, but they are delicious. My daughter isn’t much of a breakfast eater, but I feel it is important for her to start the school day with something in her other than pop tarts. I introduced the mint smoothie that you make to her and she loved it. She has liked every one that I have made so far. I think it will be the only way to get spinach in her. Thank you so much for your fabulous blog!!!

    Haha! I hear ya on the combo of spinach and chocolate making for an unattractive smoothie! I took one to work one day, and this guy asked me what was in it. I told him, and he replied, “I won’t telll you what it looks like!”

    I like to buy the bags of frozen fresh fruit. Today I had strawberry/banana with some flaxseed, i added in a handful of spinach, and almond milk. Like yours, it looked pretty nasty but was pretty tasty
