A Prescription for Margaritas

Lunch today used leftovers from two different dinners!

I threw lots o’ roasted veggies on top of a bed of romaine lettuce before topping the mix with homemade chicken salad.

I made the chicken salad using leftover pulled chicken, light Miracle Whip, dijon mustard and frozen sweet corn kernels that I let thaw overnight.

Before digging in, I shook everything up so little pieces of chicken would pop up with each yummy bite.

Cinco de Mayo Fun

    My husband and I are hosting our 2nd Annual Cinco de Mayo party tonight with about 10 of our friends! We’ll be having all sorts of yummy Mexican food, and I also made an AWESOME Margarita Cake last night which you can check out over on my blog! 🙂

    I’m definitely celebrating tonight! We’re hitting up a restaurant down on the waterfront in Boston. It seems like a perfect day out there (I’m stuck inside-boo!) but a cocktail on the patio seems like the perfect ending to the day!!

    Love the prescription – thanks for sharing! Unfortunately I’m not doing much margarita drinking tonight, as I need to get in a 5-miler and just got back from a bachlorette party over the weekend 🙂

      nope! the chicken salad actually added enough moisture to the entire salad on its own.

    It took marrying a vet for me to learn about the raisins and macadamia nuts I guess no white chocolate macadamia nut cookies or wine with dark chocolate for Gus and Tucker 🙁

    Hi Julie,
    I recently came across your blog when I was googling recipe for pulled chicken sandwich, and I have to say wow!!! I am so happy I found your blog because believe it or not I have a blog almost identical to yours , all about healthy clean eating, fitness, and just over all inspirations for others to be healthy, I also provide daily recipes with pictures mostly on what I had that day, its crazy I guess there are more people like me outhere, I love your blog, its so inspiring, and I love how you keep it personal as well, makes it more entertaining. Thanks to you I have discovered the goodness of crock pot 🙂 I had it for two years almost just sitting there, my mom gave me as a gift when I was getting married, and I never ever used it. That same night I threw in 3 chicken breasts over night with bunch of herbs and spices, and chicken stock, OMG in the morning when I was getting it out, the meat was litterly falling off the bone yam!!!
