The Man Wants His Meatloaf

Ryan has been begging for meatloaf for the past few weeks.

Though we’ve purchased lean ground beef at the grocery store with the intention of making it, lately we haven’t had patience to wait the 50 minutes it takes for the loaf to cook. Instead we’ve opted for quicker beef recipes like sloppy joes or burgers.

Tonight we had to put Ryan’s craving to rest. The poor boy has literally been in meatloaf withdrawal.

While Ryan sliced up an onion, I assembled the beef and spices. He got to do the dirty work and mix everything together by hand before plopping it in a loaf pan. (Plopping is a word I think I’ll be adding to my “words I hate list” … along with slop and panties.)

After tackling Sadie and messin’ with her for a while, our BBQ meatloaf was d-o-n-e.

We paired the meatloaf with roasted broccoli and cauliflower for some added nutrients.

    My mom used to make meatloaf all the time. She even did the whole old school ketchup glaze on top. Gotta love those days. Now, every time I see meatloaf I think of her and the canned green beans we always had on the side. I don’t think I would eat it any other way.

    I have been craving Nut Butter Encrusted Parsnips, which I finally made tonight. Craving satisfied! 🙂

    Haha, panties…one of my roommates hates that word too! She does not like when we say it. What I’ve been craving isn’t really a meal, but all I seem to want lately is hummus…on everything! Sandwiches, with veggies, chips, crackers, anything!

    definitely, definitely gnocchi. i tried it once a few years ago and wasn’t a fan. but i had it a few wks and fell in love <3 now i would like another gnocchi night soon 😉

    Wanted to let you know-you could put the beef in muffin tins and then it takes half the time to bake-which is the only way I’ll make meatloaf-hah no patience! Oh and I can’t stand all those words too!

    Have you tried Therese’s mini turkey meatloaf? It’s the shiznit, and only bakes for 20 minutes. Seriously, incredibly good. http://www.healthyhotthousewife.blogspot.com (But I think you already know the link, doncha?)

    Speaking of words to hate…”moist.” Panties is another major offender. I had been craving mac and cheese big time until the other night when I put it to rest with a big bowl of shells and cheese.

    My boyfriend Loves meatloaf too. When we first started dating i looked up a bunch of different meatloaf recipes and for about 2 months straight i made him different meatloafs every other week. I even found a pizza meatloaf recipe thats reallllly good!

    Lately I’ve strangly been craving a Thanksgiving sandwich! You know, with leftover turkey, stuffing, and cranberry sauce? Those things are so good. I need to find a way to replicate it…

    Girl, this probably won’t go over well with Ryan, but I made a killer lentil loaf the other night, which satisfied my meat craving pretty well. If he’s ever out at a game or something, give this one a try. Totally healthy and meatloafy. xoxo

    Lentil Loaf
    Nutritional Info
    • Fat: 2.1g
    • Carbohydrates: 27.9g
    • Calories: 194.6
    • Protein: 14.7g
    Ingredients
    2 cups water
    1 cup dried lentils
    1 small onion, diced
    1 cup quick cook oats
    3/4 cup low fat shredded cheddar cheese
    1 egg, beaten
    1/2 cup ketchup (can sub tomato sauce)
    1 tsp garlic powder
    1 tsp dried basil
    1 tblsp dried parsely
    1/4 tsp black pepper

    Pam or other non-stick cooking spray
    Directions
    Serves approximately 4 people.

    Boil water. Add lentils & simmer covered for 25-30 minutes or until lentils are soft & water evaporates.
    Preheat oven to 350 degrees.
    Drain & partially mash lentils.
    In a bowl, mix together the lentils, oats, onion & cheese.
    Add egg, ketchup, herbs & seasonings.
    Mix well.
    Thoroughly spray loaf pan with cooking spray and spoon loaf mixture into pan. Spread & smooth.
    Bake covered for 30 minutes and uncovered for 10 to 15 more minutes.
    Let cool on rack for 10 minutes before serving.
