Baked Berry Oatmeal

My mom sure knows how to welcome guests!

Ryan and I arrived at my parents’ house in St. Pete last night and were greeted with a delicious dinner.

My mom also had the Bride and Groom signs that were on the back of our chairs during the reception of the wedding on the back of our dinner chairs.

oatmeal 003oatmeal 004 We filled up on filet, Asian chopped salad, mashed sweet potatoes and roasted Brussels sprouts.

oatmeal 006 I had seconds of everything… including the amazing red velvet cake roll we had for dessert.

oatmeal 010 oatmeal 011We spent the entire dinner reminiscing about our wedding day. It was a great one-week wedding anniversary celebration.

Today

Today begins our honeymoon!

My mom helped us kick the day off on the right foot!

Last night she prepared a delicious dish for us to enjoy this morning.

She made baked berry oatmeal by following a recipe she found in a catalog sent to my parents’ home from The Fresh Market.

The oatmeal dish was filling, fruity and extremely delicious.

The recipe makes enough to feed six people, so it’s a great meal to make ahead and enjoy throughout the week if your household doesn’t have that many people.

Baked Berry Oatmeal from The Fresh Market (serves six)

Ingredients

  • 2 1/2 c. regular rolled oats
  • 1/2 c. steel cut oats
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 2 c. milk
  • 1 egg, beaten
  • 1/3 c. applesauce
  • 1/4 c. oil
  • 1/4 c. honey
  • 1/4 c. brown sugar
  • 2 c. fresh or frozen strawberries

Directions

Preheat oven to 400 degrees. Stir together rolled oats, steel cut oats, baking powder, salt and cinnamon in a large bowl and set aside. In a medium bowl, combing milk, egg, applesauce, oil, honey and brown sugar. Add milk mixture to oat mixture and stir until combined. Pour into a 2-quart souffle or casserole dish and bake uncovered for 20 minutes. Remove from oven, stir mixture and fold in strawberries. Bake uncovered for an additional 20 minutes, until lightly browned. Spoon into bowls and enjoy. Also delicious when topped with milk, yogurt, maple syrup or additional berries.

This breakfast is so filling! It’s definitely a stick-to-your-ribs kind of meal!

Now I’m off to organized my stuff before Ryan and I hit the road for the Keys.

    That oatmeal looks amazing too, as I’m typing this, I have some pumpkin oatmeal baking in the oven. I love raspberries, though, so I’ll have to try that next! :):)

    Mmmm that looks so tasty! I’ve been meaning to try baked oatmeal. I think my problem is during the week on my way to work I don’t have time to make it, and on the weekends I kind of want something other than oatmeal for breakfast! But someday I’ll get there.

    Is the baked oatmeal like oatmeal and soft and mushy or is it more like a granola bar and a little harder than regular oatmeal? or what is the texture like?

    So I just randomly started looking through your wedding posts (really just to get ideas for when I get married) and when I came across this one and saw the red velvet cake roll, I started drooling. I showed the picture to my boyfriend and he literally, I kid you not, started reaching and grabbing toward my computer screen to get to it.
