Baked Chicken Fingers

I’m kind of jealous of all you crazies out there who are going to a midnight showing of The Hunger Games.

And I’m really jealous of my friend Merri who is going to a pre-screening tonight at 8 p.m.

Dinner

Dinner tonight hit the spot.

Truth be told, this dinner was born out of a craving for ketchup! I really don’t like ketchup by itself (bleh!) but looove it on burgers and hot dogs. It’s also perhaps my favorite condiment for chicken finger dippin’!

These chicken fingers were healthier than most, as I baked them rather than frying them in oil.

Baked Chicken Fingers

Description

These chicken fingers are healthier than most, as I baked them rather than frying them in oil.


Ingredients

Scale
  • 8 chicken tenders
  • 2 eggs, beaten
  • 2/3 cup breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Combine breadcrumbs, paprika and salt in a shallow dish. Pour eggs into another shallow dish.
  3. Dredge chicken tenders in eggs and then immediately roll in breadcrumbs.
  4. Place chicken fingers on a baking sheet sprayed with cooking spray and bake for approximately 15 minutes or until chicken is completely cooked in the middle.
  5. Serve with ketchup, honey mustard or your favorite dipping sauce.

Yum!

Ryan and I both said these were great, but I think my favorite chicken fingers are the ones I make with Italian breadcrumbs. Mmm!

After dinner, Ryan and I took Sadie on an hour-long walk. It’s absolutely beautiful outside right now!

When we arrived home, I dug into one of these little babies…

    I’m really excited to see the hunger games. I am actually a manager at a movie theatre and people are going crazy over it. I know a couple of my co-workers watched it yesterday and said it was fantastic! Thinking I will check it out this weekend 🙂

    oh my gosh. Chicken tenders are one of my favorite foods, I love them with honey mustard. Sadly I can’t order them anymore because the breading has gluten. I need to make some myself! And I am SO JEALOUS of everyone going to see the hunger games tonight!

    Okay, am I the only person who is NOT into the Hunger Games? I feel like it’s Twilight all over again, and I’m the only one that didn’t read the books.

      Lauren, I was reticent for exactly the same reason. I was wholly unimpressed with the Twilight series (both the books and the movies – YUCK! And was only mildly interested in Harry Potter – I thought it was just a Lord of the Rings for kids )… but you really should read the books.

      While there is obviously a ton of hype (which usually makes me wary and less interested) , it is pretty well justified in this case. The series very well written, and the heroine is portrayed as both very capable and intelligent — instead of just generally useless — and the plot is highly intriguing.

      This is one instance where I say, don’t pass judgment on the hype before you give it a chance. It is really worth it. May the odds be ever in your favor! 😉

    I am loving your take on chicken fingers! I have used a similar recipe to bake fish with, but hadn’t thought of chicken, yum!

    How did you cook your sweet potatoes? I love to eat them and am always looking for new ways to fix them. Thanks!

      i chopped the potato into wedges, tossed it in a bit of olive oil and salt and baked it at 400 degrees for about 25 minutes. 🙂 easy and delicious!

    I do something similar with chicken fingers, except I heat up a pan with a little olive oil, put the chicken in there to brown on both sides a little, and then finish them up in the oven. So yummy!! And I love dipping them in ketchup, too. Or BBQ sace, or honey mustard …. 😉

    As kids, we always, always ate our chicken fingers with honey! I don’t know what got us started on that exactly, but I haven’t had it that way since I was about 9… I may have to give it another go!

    This dinner looks fantastic!

    I laughed when I saw this post because my dinner was inspired by a craving for ketchup, too! Baked carrot fries… yum! Now I definitely want to try these chicken fingers!

    My dinner was condiment driven too.. I was craving some honey mustard! Those hunger games nails are awesome. Did she do them herself or explain at the salon that she wanted hunger game nails:) bet it isn’t an everyday request.

    My husband is just as excited about The Hunger Games as I am…and we NEVER agree on movies.

    Friends used to make fun of me for dipping my chicken fingers in ketchup. Thank you for making me feel normal! I usually switch from ketchup to dipping them in honey. I’m five years old, apparently.

    I love Merri’s nails!!!!! DISTRICT 12 all the way. I just finished the Hunger Game’s last night (all 320 something pages of it) since my friends told me that I wouldn’t be allowed to go to the premier if I didn’t finish it. Lucky thing I did, I am in LOVE.

    I make baked chicken nuggets for my daughter (and my husband and me too). They are so much better than any fried ones! That is actually a meal I somehow forgot about (happens to me alot, which is one reason I started a blog to keep track!). They will be on the menu for this weekend, thanks!

    The movie was AWESOME! I cried 4 separate times during the first 30 minutes. As much as I love Harry Potter, I really wish they had stayed as true to the book as this movie did. (things were left out obviously, but at least the things they added in weren’t as egregious!)

    I love baked chicken fingers! I never make them though for some reason. Definitely going to have to change that. 🙂

    I am so excited, my library finally came in with the Hunger Games book I put on reserve! I’m hoping to read the entire book asap so I can see the movie. Yay! 🙂

    Haha, I def have made dinners based on the sauce I’m craving… Teriyaki = chicken teriyaki and rice or honey mustard = chicken fingers!

    P.S. I’m seeing HG on Sunday with some gf’s but have no clue what to expect since I didn’t read the book- but I’m expecting it to be just as crazy as it was for Harry Potter and Twilight 😛

    This dinner looks great! I have some almond flour I’ve been trying to figure out what to do with. Wondering if I could use it instead of the breadcrumbs on the chicken? Ketchup might be a little gross for the dinner but I could probably do a honey mustard?

    That dinner looks great. I love ketchup so much my boyfriend always asks me “do you want fries with that ketchup?”
    Hunger Games did not disappoint! I was jealous of everyone going at midnight too then at last second my boyfriend won tickets (an hour before the show). It was awesome!

    I must disagree with many of the previous comments about the movie. I did not like it, did not like the changes they made (omissions and additions), and was disappointed so much that I vowed at the end never to see another movie that was adapted from a book.
    The cinematography was fabulous but the screenplay was seriously lacking. The movie failed to capture the pervasive desperation in the districts, Katniss’s distrust of everyone around her, the government’s cruelty and inhumanity, and provided so little character development that you did not really care about their survival.
    So, the costumes, set, and locations were awesome–a lot of it closely matched what I had envisioned when reading the books, but the gem of the book–Katniss’s internal dialogue and revelations–failed to translate onto the big screen.

    saw it last night at midnight! it’s only one of 3 movies that i’ve ever had a desire to go see at a midnight showing. it was excellent! very true to the book and of course it is so much better than twilight because suzanne collins is a talented writer, unlike stephanie meyer (IMO). everything in the movie matched what i envisioned in my brain as i read the books. what i couldn’t get over is how many parents had young children (age 8-10) there. teenagers/children are killing each other in this movie. while it’s not exceptionally graphic compared to other movies, it’s disturbing. the kids are fighting in an organized death match.
