Banana Bread Mini Loaf

Yesterday evening I was hit by the baking bug. I wanted to make something warm and delicious, but didn’t want to make a big batch of cookies or a cake just for me and Ryan.

Then I remembered my mini loaf pans and the idea to make banana bread mini loaves hit me!

Ryan is a huge banana bread fan and when I mentioned the idea of making banana bread to him, he was more than willing to indulge my baking bug and be a taste tester with me.

As I was playing around in the kitchen, I became a bit worried that my experimentation wouldn’t yield yummy mini loaves, but once I tried the batter, my faith was restored. Banana bread batter reminds me a bit of banana pancake batter, but sweeter… and better.

In the end, the loaves came out perfectly moist and flavorful. They definitely had that traditional banana flavor, but weren’t overpowered with too much banana flare.

Banana Bread Mini Loafs

Makes two full mini loafs or three smaller loaves

Ingredients:

  • 1/4 c. whole wheat flour
  • 1 c. all purpose flour
  • 1/2 c. sugar
  • 1/4 c. brown sugar
  • 1/2 tsp. baking soda
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 1 tbsp. chia seeds
  • 1 egg
  • 1 1/2 ripe bananas, smashed
  • 1/4 c. canola oil
  • 1 tsp. vanilla extract

Directions:

  • Preheat oven to 325 degrees and spray two mini loaf pans with cooking spray
  • Beat sugars, egg, oil and vanilla extract in a large bowl
  • Once sugar mixture is combined, beat in bananas
  • In a separate bowl, combine flours, baking soda, cinnamon and salt
  • Slowly beat flour mixture into sugar mixture
  • Beat in chia seeds
  • Pour batter into two loaf pans
  • Bake for approximately 40 minutes, until the tops of the loaves are light brown

    Love the mini loaf idea. I need to do that more often because I always end up throwing out some of a large loaf! I just made banana muffins a couple weeks ago and now I’m wishing I had made bread instead!

    mmm.. that looks so wonderful! I have been meaning to buy some mini loaf pans for all this zucchini I’m baking with. Bananas would be a nice change 🙂 Also, I’ve never tried baking with chia seeds… I should probably start!

    This sounds delicious, and I love how you added chia seeds!! Did you find that it made the batter gummy (since chia seeds tend to thicken things up a bit)? Either way, it looks great!

      They’re pretty mini. 🙂 Mini loaf pans are generally the same size. I’d say four mini loafs = one large loaf.

    I love banana bread!! I love it with chocolate chips added as well. Maybe it’s the chocoholic in me, but I think banana + chocolate = an amazing combo.

    The great thing about banana bread is that it freezes really well. You could put a mini loaf (or 2) in the freezer and always have one on hand.

    Banana bread looks amazing! I love bananas. Would it taste the same without Chia seeds? I don’t have any. Would I need to subsitute something else for the chia seeds?

    I love banana bread! This is perfect because you can keep one loaf for yourself and give the other away so they don’t both get eaten in one sitting…like i would do 😉 Unless it doesn’t get outta the house fast enough!

    These look delicious! I love classic banana bread, and I usually have a loaf on hand in the fall / winter (once it’s cool enough to use the oven without heating the house up!). Love that you’ve incorporated chia seeds!
