Ice cream season is in full swing right now although you know it is ice cream season year-round in our house. Ice cream is my favorite food in the whole world. It’s Ryan’s favorite food. All three of our boys flip for it. So, basically, ice cream is king in our house and we eat it all the time all year long.
Hotter-than-the-sun outside in August = Ice cream!
Snow day in February = Ice cream!
Crisp leaves just beginning to fall as sweater weather begins in October = Ice cream!
Though we have no problem eating ice cream in our house when it’s freezing outside, I know there’s a bunch of you out there who prefer to save the majority of your ice cream consumption for hot and sticky summer months. I’m here for you today! And, wouldn’t you know, I actually decided to be a semi-decent food blogger and share a seasonally appropriate recipe for once. Sharing an ice cream recipe in the middle of summer? Finally I am ON MY GAME. Woohoo! (But please don’t hold me to this standard. I’ll probably have a chili recipe coming your way next.)
But back to the ice cream! This Cookies ‘n’ Cream Cheesecake Ice Cream is a GEM. It’s as perfectly rich and creamy as you’d expect a rich, vanilla cheesecake ice cream base to be but it’s jam-packed with Oreos so you’re getting bites of crunchy cookies — and LOTS of them — in every bite.
I know there’s a handful of you out there who might shy away from making this recipe for two reasons.
Number one: You don’t have an ice cream maker. You guys, I get it. I didn’t have one and I didn’t want one for years. I thought it would be yet another unused countertop kitchen appliance. Thankfully Ryan knows me better than I know myself sometimes and gifted me our Cuisinart 2-quart ice cream maker for my birthday when I was 30+ weeks pregnant with Ryder. It was the gift that keeps on giving. We use it ALL the time and every single person in our house gets excited when they see it on the countertop because they know something AWESOME is about to go down in the kitchen.
Number two: You don’t love cheesecake. Guess what? Neither do I. Cheesecake is actually one of my least favorite desserts. It sounds good but it somehow just isn’t. But you know what is good? Cheesecake ice cream! The base of this vanilla ice cream includes a hefty helping of cream cheese that does not overwhelm the ice cream at all. It simply adds to its creaminess and helps cut the super-sweetness a little bit. I’d even venture to say that it’s not that noticeable in the recipe so if you’re just hoping for a super-creamy cookies ‘n’ cream recipe, give this one a try and I think you’ll be very pleasantly surprised.

Instructions
- Combine everything but the cookies in a high-powered blender until the sugar is dissolved.
- Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions. (I churned mine in my Cuisinart 2-quart ice cream maker for approximately 23 minutes until it was nice and thick.)
- Add crushed cookies and churn for an additional 2 minutes.
- Enjoy immediately if you like soft ice cream or pour into an air-tight container and freeze overnight for scoopably delicious ice cream the next day!
