Chia Seed Pudding Comeback

Hey, hey!

This morning I brought back an old favorite for breakfast.

In the past I’ve made chocolate chia seed pudding, but last night I wanted to try my hand at honey almond chia seed pudding and made a batch with chia seeds, almond milk, honey and a pinch or two of oats to give it a little bit of that overnight oats flare.

I didn’t measure everything, but I hope to next time because I have a feeling that those of you who adore chia seeds and chewy textures as much as I do would love this dish.

I topped my chia seed pudding with a sliced banana and fresh strawberries and raspberries.

Chia seed pudding on its own isn’t much to look at, but fresh berries sure do amp up its visual appeal.

Workout

Today’s workout was another LiveFit workout that focused on my back and biceps.

I think that working out my back is so darn boring. I feel like time basically stops whenever I do back workouts. They seem to take forever. I don’t hate working out my back or anything, but back workouts like the one in the LiveFit program that I did today are simply dull.

I prefer back workouts like the back track in BodyPump classes – nice and fast-paced and energetic. Doing several sets of 12 repetitions of back exercises is mind-numbing for this girl.

I’m keeping things short around here this morning because I’m meeting up with a friend for coffee in 15 minutes and gotta jet!

    Ooh, I’d love to have your recipe for the chia seed pudding! I’ve been in a breakfast rut lately and totally forgot about chia seed pudding. Sounds like a great alternative to my daily bowl of fruit + yogurt lately. Enjoy coffee with your friend!

    Chia seeds make the think of chia pets 🙂 but I need to try them soon to see what the hype is! I agree, I love body pump lifting too cause it keeps me

    I’ve never had chia seeds before. Are they really noticeable when eating? I don’t know if I would like the texture.

      I’ve never had chia seeds before either. In fact, I’ve never even heard of them! I am wondering if the texture of chia would be similar to that of steel cut oats? I love trying out new grains and textures for breakfast. I would like to try this infused with vanilla and cinnamon.

    I have wondering if I am getting enough protein in my diet. I don’t eat meat that often. I think a good question for Ellie would be, “How much protein should the average woman intake on a weekly basis” or something along those lines!

    Oooh very exciting about the interview! I love Ellie and her recipes are fantastic. Can you ask her what products she uses in her skincare regime? I know that celebrities have a lot of makeup on when they’re on camera, but I’m pretty sure she has great skin without. I’d love to know what she uses – or if she attributes her glowing skin to a healthy diet!

      Ditto to this question! Ellie is beautiful and her skin just seems to glow. I’d love to know what her favorite “beauty foods” are. What an exciting opportunity! She seems like a great person. I can’t wait to read about it.

    Yes, I would love to hear the ratios you used for the pudding! And whether it was filling! I always have a problem with trying out new breakfasts that aren’t oats, and having them not being filling enough. Have fun at coffee and enjoy the interview!

    This morning I made a smoothie using the ingredients you used for your lunch smoothie yesterday. It was soo thick and creamy! I added a little granola to it and it was the perfect breakfast!!

    On a different food note, I alwasy try to eat apples or carrots or nuts for my mini snack in between lunch and dinner but sometimes it’s easier to grab a bar or something when I’m on the go. What kinds of snack bars (like Kashi or Special K, etc.) do you eat or recommend to tide you over until your next meal?

    I think I’ve stuck with running because I don’t get bored when I am running, if I am not in a group class I get waaay bored and totally just quit LOL. Good job sticking with it! Excited to hear about your interview! Should be good stuff 🙂

Like what tips she has on promoting a healthy lifestyle? I don’t know if that really is a good question but I would like to know more about how she became “Ellie Krieger”

      i link to my post about it b/c inevitably i get questions about whether or not i’m following it exactly, etc. and the initial post just gets it all out there as to why i’m doing the livefit workouts. i always link to the workout i did on the livefit website that day though… in the above post, my link to “back and biceps” takes you directly to the livefit site for the exact workout, so you can see the original source there.

      I agree! I never know what to get! Once I got grilled fish tacos at Cheesecake Factory because I thought they would be a healthier option…but found out after they’re super fatty. Fail.

    ooOOo I love Ellie Krieger! AND we have the same name~ 😉 Hmmm perhaps you can ask her if she aims to live an all-around healthy lifestyle? Like, besides eating healthfully, does she stay very active as well? (that might be an obvious Q, not sure.) And I haven’t actually made chia pudding although I eat loads of it everyday!

    Echoing a previous commenter–the back track during body pump is my favorite! I currently can’t do clean-and-presses because of a leg injury and it’s pretty heartbreaking.

    I don’t mind back exercises, but I find it hard to isolate the muscles and really feel it where I SHOULD be feeling it. A work in progress, I guess.

    Julie– where do you buy your chia seeds? I normally shop at Safeway and I havent seen them there. I know we have different stores on the other coast but maybe if I knew what part of the store? I want to try them!

      do you have a whole foods near you? they sell them in the bulk bins! you can also buy them online through amazon.com for a decent price.
