Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    lovee pecans too! dipping them into a fave nut butter (almond or sunflower seed butter) for double the nutty goodness is the way to go 🙂

    My fav way to eat Walnuts is on a salad. Almonds, straight from the freezer. Pistacios, straight out of the bag! I love nuts for snacks!

    YUM! Nuts are so delicious. My favorite way to enjoy nuts would have to be in one of the following ways: salads, smoothies, on top of frozen yogurt, by themselves, with greek yogurt, pecan pie, and pretty much every other way you can enjoy some healthy fats! By the way- I love the name of your blog Julie 🙂

    I tried cinnamon roasted almonds at the ballpark once, and they were amazing! If I had had any leftover, they would have been good to add in my yogurt!

    I love nuts any way!!!!
    In nut butter is my favorite of course! Whenever I go home on break, I buy a bunch of raw almonds/pecans/cashews and make them into my own nut butter.

    I can’t eat nuts for the next month and a week, but I’d still love to win this! 😀

    I love, love, LOVE nuts on their own, roasted and salted. I have a problem with eating them out of the bag, though, and using some self control around them. 😉
