Cooler Lunch

Since my mom was planning to be at our house around 9 a.m., after publishing my morning blog post, I headed into the kitchen to pack a lunch to bring with me in a cooler since my mom and I were planning to drive through lunchtime.

I packed chicken salad, a cup of strawberry banana Greek yogurt and an apple the size of my face into the cooler. I also packed a baggie of blue corn chips for dipping into the chicken salad.

I made my chicken salad by combining the following:

  • 1 large chicken breast, shredded
  • 2 tablespoons Smart Balance Omega Plus Light Mayonnaise Dressing (The company sent me this to try and I hate mayonnaise, but really like it! It reminds me of Miracle Whip which I actually do like!)
  • 2 tablespoons mustard
  • 2 tablespoons relish

Easy!

It reminded me a lot of my BBQ chicken salad or curried chicken salad, but with less ingredients. Not too shabby for lunch out of a cooler!

    Nuts… how can I pick just one way?

    Oh my goodness girl, I am nutz about nuts! I love them on salads, on sprinkled on oatmeal and ice cream, in cookies and brownies or just right out of the can. My ultimate treat are those scrumptious spiced nuts they sell at the malls during Christmas time, the ones that smell AMAZING! SOOOO good 🙂

    I love putting candied walnuts in salad, or walnuts/almonds or peanuts with some dried fruit for a mid-morning snack.

    All nuts should be roasted!!!! The flavor is a million times better 🙂 I like salty and sweet, so some almonds/peanuts/hazelnuts paired with dried fruit and/or chocolate. yum!! The pecans you chose look AWESOME

    These pecans sound delicious! I used to think I didn’t like nuts unless they were found inside M&Ms but I finally grew out of that and now enjoy all types of nuts, especially for crunch on top of pancakes!

    I put nuts in everything! Yogurt, oatmeal, on top of smoothies and of course in every batch of brownies I make. I even keep multiple bags of unsalted nuts in my desk at all times. Im also obsessed with toffee so those nuts are right up my alley!

    My favorite nuts by far are almonds. And if they are the cinnamon-sugar covered ones from TJ’s I can just eat them plain…by the handful 😉

    Definitely in a salad. Candied almonds? Give me a break! I love just randomly biting into one! Yummy! But also love in a chocolate bar!!!!!!

    I have roasted almonds as a snack almost daily. I buy them in bulk at Costco.

    And raw pecans! I add them to almost every salad I make.

    when im in a rush, i mix 1 scoop of whey protein, 1 tbsp peanut butter w/ flax seeds, a bit of water, & a couple of chopped almonds.

    always a life saver:)
